Pineapple Pie Recipe

Ingredients:
4 cups all purpose flour
4 tbsp granulated sugar
1 tsp salt
1 cup cold butter sticks
1 cup cold cream cheese
2 tbsp ice cold water

Pineapple Filling:
12 cups diced or crushed pineapple drained
1 cup brown sugar
1 1/2 cup granulated sugar
1 tbsp cinnamon powder
1 tsp nutmeg
3 tbsp cornstarch
1 tsp salt
2 tbsp lemon zest
2 tbsp lemon juice

Instructions:
1. Combine all dey ingredients in a bowl then place it in a freezer until ready to use
2. In a large bowl combine pineapple, brown sugar, granulated sugar, cinnamon powder, nutmeg, flour, salt, lemon zest, lemon juice, Mix well to combine. Set aside
3. Get the flour mixture and transfer about 1/2 into a food processor followed by butter and cream cheese pulse for a few seconds then add remaining flour.
4. Continue to pulse until the crumbs are size of peas then add cold water until the dough comes together
5. Turn into a floured surface press the dough until it holds together. Chill for about 30 mins
6. Roll out tue dough, transfer the dough to a 8 3/4 diameter by 1 9/64 (22.2 cm x 2.8 cm) pie plate gently fit it in
7. Place the filling in the prepared pie pan cover with your pie top and brush with egg wash
*** For those who prefer a smoother (not the chunky one) pineapple filling, you may cook the pineapple mixture in a pan over low heat (except for the lemon juice and zest; throw it in at the last minute of cooking). Mix 4-5 tablespoons of cornstarch to a cup of water. Stir until completely dissolved and pour it into the pineapple mixture and keep cooking for about 10 minutes, or until it thickens. Keep cooking for additional 5 minutes after it thickens, then remove it from heat and allow it to cool before adding it to the pie crust
8. Bake for 40-45 mins at (325 F or 162 C) until pie is bubbly and crust is golden brown
