None Such Mincemeat Cookies, Apples Raisins and Molasses Holiday Cookie

I decided to try these traditional Mincemeat Cookies today thanks to a viewer “Joan” and I am super glad I did. She makes them every year for her husband and Chris loved them too! These are very much like gingerbread but not at strong. Soft and chewy in the center with a nice crunch around the edges!

What is my new mixer and where can you purchase it? It is a Bosch manufactured in Germany. We have talked to the main US supplier and they are out of stock until October 2020. NOW FOR THIS DELICIOUS RECIPE:
NON SUCH JAR MINCEMENT COOKIES
1 CUP VEGETABLE SHORTENING
1 1/2 CUP SUGAR
3 LARGE EGGS
1 1/2 CUP MINCEMEAT (NOT BLOCK TYPE)
1 TSP. VANILLA
1/2 TSP. SALT
1 TSP. BAKING SODA
3 1/4 CUP ALL-PURPOSE FLOUR (WHITE LILY)
Mix shortening and sugar together until creamy. Add eggs one at a time. Add vanilla, mincemeat and mix well. Add two cups of the flour. Mix well. Add soda and salt, mix well. Add remaining flour. Drop by teaspoons out onto parchment paper lined cookie sheet. Bake 12 minutes at 400 degrees F. Makes a lot of cookies. Dough can be frozen or refrigerated.
