Strawberry Rhubarb Pie

Double Crust Ingredients:
2 – C. flour
1 – tsp. salt
⅔ – C. shortening
6-7 – Tbsp. cold water

Filling Ingredients:
2 – C. washed & chopped Rhubarb
3 – C. washed & chopped Strawberries
1 – C. sugar
¼ – C. flour
½ – tsp. cinnamon

Dough Procedure:

Mixed flour and salt.
Add shortening and blend until pea sized
Mix in water a tablespoon at a time until all dough is moistened.
Divide in half and form into 2 balls.
On lightly floured surface roll out each ball to the size of your pie tin or about 12″.

Filling Procedure:

In large mixing bowl, mixed sugar, flour and cinnamon.
Add rhubarb.
Add strawberries.
Mix until coated evenly.
Transfer to pie tin. Top with pastry top. Pinch edges.
Cover edges with foil and bake at 375° for 25 minutes.
Remove edge covering and bake for an additional 20 to 25 minutes.
Remove and cool.
