MOTHER’S DAY WAFFLES // COOKING W/ LIZZIE

Ingredients:
Waffle Dough:
– 2 cups of flour (can substitute Gluten Free)
– 1 1/2 tbsp Spiceology Maple Sugar
– 1/2 tsp salt
– 2 tsp yeast
– 3 eggs
– 1 cup butter, melted
– 1 tsp Vanilla extract
– 1/3 cup warm water

Blueberry Bacon Bourbon Toppings:
– 1lb of blueberries
– A package of bacon, cooked extra crispy
– Bourbon maple syrup
– 1/4 cup Spiceology Honey Habanero

Strawberry Champagne Toppings:
– 2 cups sliced strawberries
– 2 cups of champagne
– 1 cup sugar
– 1/2 cup Spiceology Strawberry Powder
– 1/4 cup Spiceology Maple Sugar
– 1 cup Spiceology Carbonated Sugar

Fresh Whipped Cream:
– 2 cups Heavy Whipping Cream
– 1/2 tsp vanilla
– 1/3 cup Sugar

How To’s:
The Waffle Dough:
– In a stand mixer (or in a bowl with a hand mixer or spoon) combine the flour, salt, sugar, and yeast. – – Mix lightly
– While mixing, add in your warm water. Then slowly add in your egg and vanilla extract until just combined.
– Now slowly incorporate your melted butter. If using a hand mixer or spoon, add in 1/4 cup – 1/3 cup melted butter at a time and stir until it’s mostly combined before adding more. Dough will be sticky and thick.
– Once all ingredients have been combined, transfer to a clean un-oiled bowl, cover and let rise for 1 hour 30 min. (If making your dough ahead of time, stop here and do step 5 the next day. Dough can be stored, covered, in a neutral location. If your house is very warm, you can store it in the fridge, but remove 30 minutes before using it.)
– At this stage you can add in any mix-ins you would like: chocolate chips, pearl sugar, sprinkles, fruit, etc. Then let rest an additional 15 minutes.

Making Whipped Cream:
– For the quickest results, use a metal bowl and chill it in the freezer prior to using.
– Combine your heavy whipping cream, sugar and vanilla in a bowl.
– Whip on high speed until stiff peaks form.
– Done! Store in an airtight container and use promptly.

Building the Blueberry Bacon Bourbon Waffle:
– While the dough is rising, make your bacon! I prefer extra crispy bacon for this recipe so it stands on its own and brings a great texture. As you are cooking your bacon, sprinkle each side heavily with Honey Habanero.
– Once bacon is finished, let cool and then chop.
– Warm up your waffle iron and spray with your preference of non-stick spray.
– Once waffle iron is warmed up, use a measuring cup, ice cream scoop or spoon to section waffle dough. Loosely roll into a ball, place on the waffle maker then sprinkle with 1 tbsp of your chopped bacon, close waffle maker and cook for approx. 7 min.
– When the waffle is ready: sprinkle with blueberries and drizzle a little bourbon maple syrup. Then top with whipped cream, more blueberries, bacon, and more syrup.
– Snap a picture, tag us and enjoy!

Building the Strawberry Champagne Waffle:
– While the dough is rising, make your champagne syrup! (And obviously pour yourself a mimosa – since the bottle is already open)
– To make your champagne syrup, combine your champagne and sugar in a saucepan over medium-low heat. (Tip: the more sugar you add the more syrupy it will become, less sugar will keep it thinner)
– Let sauce simmer for approx. 20 min. Sugar should all be dissolved and you should not smell the alcohol any longer. Remove from heat and place in a cup or heat safe container.
– Once the dough is ready, warm up your waffle iron and spray with your preference of non-stick spray
– Mix the strawberry powder and maple sugar together in a shallow bowl
– Use a measuring cup, ice cream scoop or spoon to get a chunk of dough. Roll it loosely into a ball and then press the dough into the strawberry powder mixture, coating the whole outside of the ball.
– Place dough on waffle iron, close it and cook for approx 7 min.
– When the waffle is ready, drizzle with some champagne syrup, top with sliced strawberries, a generous dollop of whipped cream, more strawberries and a heavy drizzle of the champagne syrup.
– Right before serving, give each plate a generous sprinkle of the Carbonated Sugar for a fun surprise and enjoy!

hey guys welcome back today we are gonnabe making two different types of wafflesand this is everything you are gonnaneed Mother’s Day is coming and I don’tknow about your wives moms grandmas butI am NOT a Belgian waffle fan so todaywe were going to be making somedelicious e pillowy crispy yeasted doughwaffles that you can prep the nightbefore so for all of this you’re gonnaneed some bacon melted butter yeastvanilla extract flour eggs salt alwaysblueberries strawberries are amazing fanfavorite honey Cobb some maple sugarstrawberry powder carbonated sugarbourbon maple syrup and a bottle ofchampagne so we’re gonna start with thedough for that specifically we’re gonnaneed that melted butter the yeastvanilla flour eggs salt and we’re gonnabe using our maple sugar to sweeten thisup so we’re gonna start by just addingthose dry ingredients in our flour saltyeast and two tablespoons of our maplesugarthis stuff smells like fresh bakedcookies and we’re just gonna give that alittle toss to incorporateand next we are gonna incorporate thesebad boys one by one while the mixer isgoing so this is gonna start out as areally sticky and thick dough I reallycranked my stand mixer up to get it tocome together really nicely you’re gonnasee a little bit of separation it helpsme unlock it but we’re looking forsmooth incorporation you’re alreadyseeing some of the gluten stretching inthere the yeast being activated thiscould technically be considered a Liegedough so all that means is it’s gotyeast and you can throw some yummyBelgium sugar crystals in it and getthis caramelize deliciousness but todaywe are gonna achieve all that for mylovely maple sugar so after we’re happywith this we are just gonna scoop itinto a bun greased bowl cover it up andlet it hang out for an hour and a halfso for our first waffle it’s gonna be ablueberry bacon bourbon and we are gonnacook that bacon just using our honeyballs so I’ve got four pieces here I’mgonna put in the pan and before it getstoo hot I’m gonna sprinkle the honey hobright on top of it all right so we arejust gonna scoop right into this jar andsprinkle over the top all right so whilethe bacon is cooking we are going tomake some champagne syrup for thestrawberry champagnewe’re only going to use a cup of this soobviously you need to save it from themostess for your mouth so we’re gonnause a cup of the champagne it’s gonna bea one-to-one ratio in a syrup now if youwant a stickier drippy or syrup I wouldadd more sugar if you want a thinnermore of a soft texture I would stickwith more champagne this together let itsimmer and have all that sugar dissolvedand if you’ve got little kids eatingwaffles with you make sure you let allthat alcohol burn as well alright soI’ve done the first flip of my bacon andI’m just gonna sprinkle a little bitmore honey hob on the other sideall right so Bacon’s about to come on Ilike my bacon extra crispy so do notjudge me that is not burnt it is flavorespecially with the honey granules inthat blend it’s gonna crisp up a lotfaster because you’ve got all that sugarso we are gonna let these sits and cooland then the chop them up the bell inone of our wafflesall right so our champagne syrup hasbeen simmering for probably about 20minutes I’m just gonna take it and dumpit into this measuring cup and let itcool the more it cools the thicker it’sgonna get and you’re just gonna havethat beautiful light amber color ourbacon is cooled so we are gonna chopthis up into some little pieces to go insome of our waffle dough and on top thatcrunch is so nice all right so our doughhas rested if you are prepping this thenight before you can totally pop this inthe fridge it won’t kill the geese it’lljust give it a nice pause and then youcan whip it out in the morning and startfrom here we are gonna go with the baconbourbon and blueberry first I like touse an ice cream scoop and I just scoopit in there get a little bit extra rollit into a nice little ballwe are gonna pop it on here that honeyhabanero bacon we made we’re gonnasprinkle on top and then close it upokay so it’s been about seven minutessince we put this bad boy on and it islooking delicious all that bacon is inthere it’s got a nice golden color tothe outside I am so excited I’m gonnapop this guy offwe are gonna start by sprinkling someblueberries on first blueberries on ahot waffle it just softens them up a bitI like to layer my waffles so we’ve gotsome of this bourbon maple syrup goingon just a really soak in there somehomemade whipped cream because it’s thebest kind[Music]always always more bacon moreblueberries an extra drizzle of thatmaple syrup and then we’re just gonnagive it a little extra umphthen sprinkle more of that maple syrupsugar right over the top I don’t knowabout you but that looks phenomenal I amso excited okay we’re gonna set this guyaside and don’t let it go too farand we are gonna do our strawberrychampagne next so I’ve got a little bowlof our maple sugar I’m gonna take ourstrawberry powder which is so cool ittastes like strawberry candy and alsofarm fresh strawberries all at the sametime I don’t know how we do it I’m gonnaput scoop fold of that in and just mixit up with that maple sugarperfect and we will take another scoopof dough handy the nd ice cream scoopercoming in whoa that’s scratch roll it upand then you are just gonna coat it[Music]there is that beauty I know she looks adark but it’s just that strawberrypowder and the sugar she is lookingawesomewe are gonna do a little bit of thatchampagne syrup on top especially whenit’s hot it just soaks into the waffleand gives it all that extra yummy flavortop it with top it with some strawberryslices how can you go wrong with someyummy spring strawberries some more ofthat delicious whipped cream[Music]you never have too much extrastrawberries[Music]that strawberry powder we sprinkled onthe waffle we’re gonna do a little biton top coming in with some more of thatchampagne syrup and now for the fun partyou cannot cook with bubbly and not havea little snap crackle pop you’ve got twoamazing options for your Mother’s Dayweekend a killersalty sweet spicy balance and awonderful twist on classic and now it’stime to taste these bad boys a great dayto skip breakfastokay everything in therethis is an amazing combination you getthe classic strawberries and cream withthat champagne aftertaste and thecarbonated sugar is an amazing pop oftexture what’s go wrong all right thisis my personal favorite I have had ahuge sweet person first thing in themorning so to have something that issalty and sweet and a little bit ofspicy it is everything I could ask forfor a Mother’s Day breakfast withbourbon[Music]the bacon and the blueberries and howcould you go wrong
