NO BAKE KEY LIME PIE

Ingredients:

Crust:
1 1/2 cups graham cracker crumbs
1/3 cup of granulated sugar
6 tablespoons butter, melted
Pinch of salt

For the filling:

1 cup of heavy cream
1 14 ounce can of sweetened condensed milk
8 ounces cream cheese, full fat, room temperature
Half cup of lime juice
1 teaspoon of lime zest

For the Garnish:

1 lime sliced
1 teaspoon of lime zest
Whipped cream

INSTRUCTIONS:

For the Crust :
1. Mix graham cracker crumbs and sugar together in a 9 inch pie plate. Mix in the butter until everything is moist and then press into the bottom and up the sides of the pan. Chill in the fridge for 30 minutes.

For the Filling :

1. Meanwhile, beat the heavy whipped cream in a stand mixer fitted with a whisk attachment until stiff peaks. Removed whip cream from the bowl into another bowl.

2. In the stand mixer (no need to clean out) beat the cream cheese for two minutes until creamy. Stream in the sweetened condensed milk and mix until smooth. Add the juice and zest and mix until combined. Scrape the bowl as needed.

3. Add the whipped cream back to the bowl and use a rubber scraper to fold it in.
Pour the filling into the chilled crust and smooth out the top. Cover with plastic wrap and chill in the fridge for four hours or overnight.

For the Garnish :
When ready to serve, garnish with whipped cream, lime zest, and lime slices. Slice and serve.

[Music]go back to my kitchen and welcome to therecipe therapist on today’s episode I’mvery excited because I’m participatingin another collaboration this one ishosted by Sonja from the domestic divaand Sonja’s decided to host thisMother’s Day brunch collaborationthere’s going to be lots of wonderfulyoutubers that you’ve been making somegreat desserts and dishes for all of youand there’s gonna be a great playlistthat you can all check out in mydescription box below and today I’mgoing to be making for all of you it’sdelicious no baked key lime pie this pieis gonna be so creamy so delicious Icannot wait to show you this recipe solet’s get started first thing we’regonna do is we’re gonna start off withour graham crackers that I’m gonna add1/3 of a cup of sugar just gonna pulseit until so I finished the processingthe graham cracker crumbs and these arelooking really goodso now what we’re gonna do is I’m gonnaput the top back on because we’re gonnaput some melted butter into this crust Ihad about 1 cup here of melted saltedbutter and I’m going to put it into thetop of the processor I’m gonna put it inslow as I turn the processor on and thisis going to bring the whole crusttogether so that we can you know pour itinto that pie plate and we’re going tobe able to really mold it and shape itfor this delicious looking pie so thisis what the crumbs I look like after theaddition of the melted butter and youcan see it’s nice and moist and reallymoldable so I’m gonna take it out andpour it right into this pie plate[Music]our delicious pie crust looks like wecame out perfect it’s a nice and shapedof the sides and now it has to go in therefrigerator for about 20 minutes tosolidify and in the meantime we’re gonnastart on the filling for this piethe four ingredients that goes into theflowing of this delicious pie we’regoing to start out with one block offull fat room temperature cream cheesewe have one can of sweetened condensedmilk and I have one cup of heavy creamwhich I’m going to whip up in just amoment and then we’re going to juicethree limes and then we’re going to takethis s first thing we have to do for thefilling of our pie is we’re going tobeat this whipped cream it’s about onecup here so I’m going to mix this on I’musing my KitchenAid mixer with the whiskattachment but you can use a handheldmixer I’m going to beat it till it’slike soft peaks[Music]so now we’re ready for our cream cheesepart of this recipe I’m gonna put it inmy mixer I’m gonna beat it for about twominutes till it’s nice and light andfluffynext I’m ready for the sweetenedcondensed milk so I’m pouring that innice and slow as I turn my mixer on andI’m just gonna blend it for about 30seconds or so until it all comestogether now I’m going to add the limejuice which comes out to about a half acup from three medium-sized limes andthen I’m gonna add that delicious zestonly half the amount into this mixtureand the other half I’m gonna use forgarnish and here I’m just giving it afinal mix with a rubber spatula just toget out any kind of lumps and bumps thatmay be left over and now we’re gonnatake that heavy cream that we set asidebefore and we’re gonna add it to this amixture and we’re not going to you knowuse an electric mixer to blend it we’regoing to take this spatula here and justfold it together[Music]so now I’m just going to smooth this outwith my rubber spatula and this has togo in the refrigerator to solidify forabout four hours[Music]so here we have friends are creamy keylime pie all done and complete Igarnished it with the rest of the zestand those lime wedges with the whippedcream and now I want to show you whatthis pie looks like when you cut into itoh my goodness look how a creamy andsolid is turned out so good I am sohappy with this pie so I’m going in totake a taste or just delicious so thisis the best key lime pie it’s so creamyit has just the right amount of line andthis crust is so good it deservesanother bite I want to thank you all forwatching today and remind you to checkout that playlist of all the otherparticipants and they’re deliciousMother’s Day brunch recipes a lot ofthanks Sonia for hosting this Mother’sDay brunch collaboration and we will seeyou next time to set up some more lovefigure[Music]you
