from my pie with me today evenhis awesome that kitchen over there andhe’s gonna help me kind of walk youthrough it throws to it Ryan how youdoing Lexie I’m doing great how are youI’m really good thank you so much forbeing here todayyou got it I got a I’ve been cookingpies all day all week and all Quarantinehonestly I got one coming out of theoven right now whoa you know the funpart about doing the taken bake kit isit you can do Pete’s your way so I likea little bit of meat I like a little bitof veggie eat your way but it’s got anice golden brown from cooking in yourhome oven yeah that’s beautifulthey went in and got my taking bakedsupplies today so I have the dough Eddiedoes provide flour which is awesome soright we got the parmesan and themozzarella over here cheese wise up withtoppings you have beautiful veggiesthese look beautifulfresh or just I mean I got like in thismixer it’s like red bell peppers withgarlic and olive oilyeah so it’s a roasted red peppers we doour veggies in-house we’re bringingfresh produce we leave we Cesar all ofour vegetables fresh season mushroomsthat’s a roasted red pepper which we doin-house garlic olive oil salt pepper alittle parsley so we do fresh we’rechopping in-house and we’re roastingenjoy the freshness so Rhett before youstart cooking you want to preset youroven you want to preheat 374 75 allright now get yourself set up of courseenjoy a glass of wine you know cookingis love and you need to enjoy some winewhile you cook right especially at hometoday I’m drinking the same we do ourmama be a house blend to go white andred need abaking sheet ideally at least 12 inchesa standard cookie sheet or any kind of abaking sheet okay want to do is we’dwant to get a little bit about either aCrisco or an olive oil I use a olive oilspray just to give it a little slicknonstick for the pan so that fresh doughdoesn’t stick to the bottom so I’m justgonna lightly grease my pan okay whatI’m gonna do is I’m gonna take a littlebit of flour I’m gonna put a little bitof my counter top just so I can workwith the dough so now I have a littlebit of flour on my hands I’m gonna putthe dough right on top of that flourokay and now I’m just gonna knead thedough meaning I’m just pressing down I’mgetting the bubbles out all right I canflip it right over and I can do the samething now imagine holding it like asteering wheel okay I’m gonna letgravity do the work and I’m gonna closeslowly turn the wheel a rough go youwant to go about I want to go about 1012 inches and then just transfer to yourcookie sheet or your baking sheet andmaintain a circle ah all right beautifulnext is gonna be the sauce so we provideyou with the exact amount of pizza sauceget a decent amount of sauce about 3ounces right in the center and now witha ladle I’m gonna start from the insideand I’m gonna do concentric circles outmaking it nice and smooth nice and evenwe got our sauce there right so now welike to season our sauce my fighteverything’s kind of enhanced as far asflavor profile so we use a gratedParmesan Romanotersely parmesan a little bit grignrthis is i smoother content this will adda nice salt content to the sauce sowe’re gonna take our poor John Romanoand I’m just gonna season that sauce onedude six inches over the sauce my piesnot gonna look like that okay that’llspread out as it cooks all right next isgonna be your the mozzarella cheese allright you want to start from the outsidejust lightly get that cheese you want tosee red under white you don’t want tosee just white and white that’s too muchcheese you lose the balance of a realauthentic pie because it will cometogether it’ll melt correctlyall right so now that’s how my pie looksright now well of yours coming outreally good really good yeah yeahperfect perfect I’m gonna enjoy anothersip of wine here all right all right sonow the peep to your way comes in thecreativity here I’m gonna make threedifferent meats I’m gonna meet downfirst my pepperoni I’m gonna go rightaround the perimeter on the outside weuse a nice three inch diameter Hormelpepperoni really premium France you domeat firstit’s not an open flame oven so it mightI we do veggies first because it’s anopen flame oven at home we’re gonna doveggies after it’s a standard convectionoven so an open flame oven would torchthose veggies here at home we can domeat on the bottom shoot yeah yeah whatpineapple you know it’s funny I’m fromthe East Coast I’m from Jersey it’s adefinite nay there’s no wrench nopineapple sometimes they say you knowwhat go ahead it spits your way anypitcher to me is a fantastic so I’m asupporter now but really you know whatdo you like I do jalapenos for a littlebit of heat I got roasted red peppersI’ve got some fresh basil black olivesmake it look nice it’s gonna cookexactly how you build it you can orderone of our pies one of the my pies andwe’ll set you up with those exacttoppings I love that so if you have arecipe we’ll send you that kit yeah keepmy favorite my pot we’re gonna send youthat kit is so coolall right so I’m pretty much here I’mready I’m ready for the oven okay allright so now we’re at 475 the ovenshould be preheated at this point I’mgonna put it in ideally it’s on themiddle rack in the oven that’s gonna bethe best top and bottom heat for abalanced cook I’m gonna set my timerwell to 15 minutes 12 minutes gives youa little bit of a lighter cookfifteen will give you pretty crispy yeahmm-hmm a nice crisp right nice goldencrust you can really get a sense of ourfresh our fresh made dough and ourchopping all homemade ingredients youknow house-made dough house-made sauceseasoned vegetables we roast the chickenwe caramelize the onion I had someonetell me that when you toss your owndough it tastes that much better and Ithink that’s true what we’ve realized iswe’re serving an experience you knowwe’ve been serving food for seven yearsnow but now we’re serving food but we’reserving family fun we’ve created anexperience and everybody has felt closeras a family so it’s been very rewardingfrom the love given through this I’m afamily experience I agree this is agreat dinner but it’s also a greatactivity to do all together let the kidsmake one make one together as a couplego get a bottle of wine at my eye beforeyou come home have a glass while you’recooking it’s great this is a great idearight thank you for walking me
