Levain Bakery Style Cookies (makes 8 MASSIVE cookies)

INGREDIENTS
– 225g unsalted butter, slightly softened
– 130g light brown sugar
– 130g white sugar
– 2 eggs
– 113g cake flour
– 210g all-purpose flour
– 6.2g baking soda
– 2.5g cornstarch
– 2g sea salt
– 200g walnuts
– 170g dark chocolate chips
– 160g milk chocolate chips

METHOD
1. Preheat oven to 200C/400F
2. In a stand mixer with the paddle attachment, beat butter for about a minute until soft (on low speed).
3. Combine brown and white sugar in a separate bowl and add in with the butter. Mix for 1 minute on medium speed.
4. Add 1 egg at a time, and mix on medium for 30 seconds between each one.
5. In a separate bowl, combine the flours, cornstarch, baking soda and salt. Sift ingredients to remove lumps.
6. Add half the flour mixture into the mixer and mix on slow first, then medium speed until JUST combined.
7. Add the rest of the flour and do the same.
8. Add the chocolate chips into the mixer and either mix for 10 seconds, or fold them through with your hands.
9. Repeat for walnuts
10. Line a tray with baking paper. Divide the dough into 8 equal sized balls (should be 175 grams about each)
11. Place only 3 cookies on the tray at a time. Make sure they have PLENTY of room between them because they will spread.
12. Bake for 11-13 minutes.
13. Remove from oven and LET SIT FOR 15 MINUTES ON TRAY (super important because they need time to set. They will feel mushy and soft straight out of the oven, but after 15 minutes, they will harden up and you’ll be able to pick them up in one piece)
14. Enjoy!

hello and welcome back ginger welcome to
yet another episode of baking week and
see the pen thing means a lot recently
which are the New Yorker bakery start
book yes so basically they’re these
massive chunky cookies they’ve got a lot
of chocolate chip and they’re really
thick as well I want to try and create
that so this is gonna go either one of
two ways either gonna go extremely well
or horribly wrong so we’ll just have to
wait and see
I’ve never made these before so whatever
happens happens
I found quite a few recipes for these
online I think they’re from the levain
bakery or copy cars of these over and
they all have a lot of bean grania and
they’re little bit complicated but we’ll
try our best and say what happened I’m
just going to start actually pull that
little rusty mix up jam and you used a
lot before now will at least get some
use out a lot that’s a first
I’m going to mix up the batter and you
need a whole cup of butter okay so I’m
just gonna wipe all the ingredients one
of the recipes I found they all use cups
and I really prefer grams I will put the
full recipe in the description box with
the cup and ground measurements to make
it easier and then afterwards I really
want to come here tomorrow it could be
quite curious
yeah I think I captured butter is 225
grams there don’t mind me influence get
our knife my hands are clean don’t worry
about a soft painting on the counter
overnight but my house is kind of cold
so I haven’t really multi-tow softened

I’m just gonna happen to be small so you
need Kay cloud plain flour for this
maybe that’ll make them and keep them
nice and chunky and you also need some
cornstarch and then put upon fighting
with the flowers I think that will help
the cookies cake their deep shape and
not spread out too much I’m getting a
bit crowded here you’ve got making black
do you’ve got normal flour cake flour
baking soda some sea salt just a flat
enhances the cookies there and also in
case you’re wondering I cannot really
see what I’m doing
but anywho you need one cup of egg flour
when I looked it up you’re supposed to
be 113 I’m going to sift the flour into
the don’t get any lumps
they want cake flour and one of the big
water cups of normal flour alone
somewhere recipes don’t just help grams
in 1 cup of things now a 120 grams they
should be 210 grams I think for one
under a water cup is done and then one
teaspoon of baking soda
one teaspoon of baking soda 86.2 ground
and when you run teaspoon of cornstarch
which is two and a half grams this
batter tastes really good because
they’ve got a billion ingredients the
process is very long and I am using high
quality stuff as law just to make sure

of milk and dark chocolate I’m going to
use one cup of dr. Moreau uncoupled milk
chocolate chips and then the two cups of
walnuts a day set
it’s a one cup of chocolate chips in the
doctor project is 170 grams are they
sick to you semi-sweet chocolate chips
where I can find them anywhere you
supermarket tell I’m just getting milk
and all and yes cupboards cuz have this
chocolate it’s literally the best we
have there are some other chocolate
bands that I’ve tasted both in Cadbury’s
by father that’s or comment down with I
never know rich chocolate branch you
like the best
so the chocolate chips I’m using for the
little one is Cadbury’s and the doctor
wood chips unless they take quarters and
in the chocolate chips yeah but you know
the recipe and father and yourself you
can bake them straightaway but I felt
like if you put chocolate chips in the
fridge for at least half an hour or a
maximum of 24 hours before you bake them
they taste even better kind of do one
mix and now time to add the walnuts and
outdating to and it kind of looks like
there’s not enough data to incorporate
all the chocolate chips in the bond
that’s about all see and one cup of
walnuts in 100 we’ve got our second copy

okay so what am I saying before is that
I’m the recipe says to bake them
straightaway but I’ve heard that cuz you
don’t have to not that I’ve been
refrigerator for a while or jilt so what
I’m going to do is I’m going to bake
this recipe makes eight so maybe I’ll
make coffee
no more just three of them now and I’ll
put the rest of the enjoy in the fridge
and baked in tomorrow about after a
little mallet and see what their

okay so these are out of the oven and

the rest of them yesterday
so yes they’ve been sitting on the
counter how big these things are been

one of them on the way my family and I
tasted them all on my family I can you
really like them and she made that taste
like subway cookies kind of these are so

cookies
each one is 873 calories then
considering how many chocolate chips and
walnuts are in that I guess that makes
sense
forty six point nine grams of fat Wow
okay at seventy nine point two cards and
11.1 grams of protein and there are also
in each cookie
forty six point five grams of sugar so
this is basically a diabetes bomb just
breast to have about 55 grams of sugar a
day but it’s good to have this as a
one-off thing but definitely not every
day I know do you recommend making them
to try it out and see what they’re like
in America leftovers after my family and
I have got into another okay that one’s
always chilled first I’ve come out of
your home they’ve been tuned and
accounted for about 15 minutes to cool
down but come on look at yes to play
with my actual yeah how big these
cookies really are can you say holy Sh I
would say but yeah I think after being
in the fridge for a while they just want
some baked a lot they’re tough and say
that the colors are a lot nicer compared
to these ones here now they don’t have
been sitting on the counter for 15 to 20
minutes you need to let them sit on the
counter before you ate them because
right after taking them out of the oven
they are super soft okay but can you say
the different states are the ones I
baked two days ago I think because
they’ve been sitting on the counter
they’ve kind of sold and then you can
say they don’t say they’ll bake to just
not but a lot gooey oh yeah it’s like oh
yeah I don’t pull apart oh yeah
slightly won’t not really good there are
a bit Gracie that straight on at the
other but they’re test really but
especially being a little bit along they
are worth trying so leave the whole
