Quarantine Cookies Full Timelapse

I am making quarantine cookies which isjust a batch of cookies with what I haveon hand right now before getting startedmake sure to preheat the oven to 350 to375 Fahrenheit I use 350 here in Denvermetro area because the altitude thisrecipe is the Ghiradelli chocolate-chipcookie recipe that I have used since Iwas a wee lad and we’ll post a link tofirst I will make brown sugar which therecipe calls for Here I am breaking upthe clumps and this evaporated canesugar before adding the molasses duringa quarantine is important to be able tomake everything you want from what is inyour pantry I purchase a large bag ofevaporated cane sugar and always havethis on hand packed in glass jars thismakes it clumpy but the mixer has myback I also keep molasses in the pantryso I’m always ready to go for a batch ofcookies I do not measure this but add ituntil it looks right I got super luckythis time that it was perfect firsttrack if you have not done this as manytimes as I have add less you can alwaysadd more molasses make sure to get thedarker balls of molasses to break up andincorporate before adding more it doesnot matter if your stand mixer is a tilthead or lift bowl model and it can evenbe done by hand but that’s gonna be alot more work also make sure to scrapedown the paddleonce the brown sugar is a uniformconsistency place it backing glass jarsto store it mix the dry ingredients in alarge bowl prior to starting the wetingredients here I’m mixing two and aquarter cups of unsifted flour beingcareful not to pack it into themeasuring cupI am using all-purpose flour butanything will work in a quarantinenext up is a teaspoon of baking soda togive the cookies lift and then a half toa full teaspoon of salt I use about ateaspoon because I like the extra saltgive it a good mix and set that asidenow for the wet first I beat the butterto stick softened waste not want notwith that little bit of butter stuck tothe paper and I wash my hands thoroughlybefore starting this so I’m notconcerned with using my hands I add thethird of a cup of brown sugar I measuredafter making brown sugar and then I hada short 3/4 of a cup of white sugar tomake up for the sugar stuck to the bowlI’m gonna let the sugars cream into thebutter don’t forget to scrape down thebowl including the very bottom as themixing progresses I want to make sure tolightening colorI saw a patch I missed here so I stoppedand scraped it down I was also a one-manbandchecking on two cameras while the butterand sugar creamed together this billalso has a dimple on the bottom andmakes scraping it down tricky but notimpossible also make sure to clean asyou go once you’re done with a dish goahead and put it in the dishes if youwatch carefullyyou can see the mixture get lighterwhich is what we’re looking for we’retrying to incorporate air into thismixture which will be another leavenerwhen the cookies go into the I promiseit will feel like less time is passingwhen you’re actually making the cookiesthey’ll be done before you know italternate scraping and mixing until themixture looks like frosting you’ll seeit lighten up here in a bit and get alittle bit thinner on the side of thebowleverything is sped up here and somethings are cut out entirely so let meknow in the comments if you’d like afull length video it was about 18minutes long which I thought was alittle bit long here I’m cracking eggsinto a separate container to make surethat the eggs are good before addingthem to my mix as always when workingwith raw eggsmake sure to wash your hands afteradding them to the mixture here you cansee me doing that and again we’re gonnafollow the same procedure mix and thenscrape you can see that the butterand sugar is stuck to the side of thebowl while the eggs are just mixing ontop doing this bowl scrape a coupletimes is going to ensure that everythingis incorporated fully and also makes alittle bit more air into the mix forleavening at the end in the spirit ofquarantine I’m adding my homemadevanilla extract it is 10 ounces of JimBeam with one split vanilla bean in itmight have made it a bit weak so I addedtwice what the recipe calls for I can’tfollow the recipe exactly ever addingthe extract makes the mixture grainy andI mix it until this smoothes out you cansee the graininess on the spatula I’vegot to get my head in there to get agood look to ensure the correctconsistency and again mix and scrape mixand scrape I’m actually having a bit oftrouble not eating this mixture at thisstage with the raw eggs in this mix I’mnot taking any chances the way thehospitals are right now I normally eat anumber of cookies worth of dough whileeverything is mixing and once everythingis together but I’m not taking mychances this time you can see that I’mletting this mix for quite some time tomake sure to add a bunch of air intothis mixture and also scraping down thebowl again now it’s time for the dryingredients I had them all at once inthis recipe as it works just fine Istart the motor slowly to keep the flourin the bowl and not in the air andanother scrape down I do the last greatbefore the flour is completelyincorporated to not overwork the dough Ido not want to develop the gluten anymore than necessary before I add thechocolate I scraped the paddle too tomake sure that everything is in thedough and not going to have floweryclumps now the dough is perfect I hadwhat chocolate chips I have I am a bitshort here but they wouldn’t bequarantine cookies without a fewmodifications here you can see I haveabout one and a quarter cups while therecipe calls for two cups total give ita mix real quick but not very long atall and now you can see that I’mdropping the paddle and scrapingeverything down tada the dough is done Ireally want some of that sweet sweetcookie dough the next step is to dropballs of dough onan ungreased sheep how would space themout a bit more than I did and you willsee why when they come out of the ovenit doesn’t harm the taste though I hadbeen planning these cookies for days andwas in a bit of a hurry to get them outof the oven which I shouldn’t have beenoh wellquarantine cookies once the dough issafely on the sheets you can put them inthe oven if you want to do two at a timemake sure the racks are evenly spacedvoilafinished cookies well you can see someare touching this is why I was saying tospace them out a bit more stay safe outthere
