Dry roast 1 cup of pumpkin seeds
1 green chilli ( to taste)
1 tsp cumin
1 tsp fish tamarind (kokum)
Lots of cilantro leaves and salt to taste
Grind it to a paste and enjoy!

2. Dosa Batter

Ingredients:
Par boiled rice or idli rice – 3 cups
Whole skinned urad dal – 1 cup
Fenugreek seeds -3/4 tsp (optional)
Salt to taste

Wash and soak urad dal and fenugreek seeds.
Wash and soak rice separately.
Soak overnight or for 6-8 hours.

Drain the water and grind urad dal in a wet grinder, Vitamix or a food processor. Add water a little at a time until you get a smooth fluffy batter.
Separately grind rice to a slightly coarse paste adding water little at a time.
Transfer the ground rice and dal to a large container and mix well together with clean hands or using a ladle. The consistency of the batter should spreadable thick.
Let the batter ferment overnight in a warm place. The batter will double (rise) in volume with fermentation. Add salt and mix well. Batter is ready for Doffle!
