How to Make Fluffy Pancakes & Waffles | Simple Recipes

Buttermilk Fluffy Pancakes:

Skip the storebought pancake mix and try these light and fluffy Perfect Buttermilk Pancakes.

The main secret ingredient for this recipe is the Buttermilk itself. These pancakes are buttery with golden crisp edges. Pancake is one of our son’s favorite breakfast or snack, I’ve tried different recipes for making pancakes and I’ve found that using Buttermilk in the recipe makes a huge difference and letting the batter to be chilled for couple of minutes helps a lot to achieve those fluffiness.

Ingredients:

2 cups all purpose flour (spoon and leveled)
2 teaspoon baking powder
1 teaspoon baking soda
5 tablespoon granulated sugar (you may add less if you want to)
1 teaspoon salt
1 teaspoon cinnamon (optional)
5 tablespoon melted butter (we like it buttery!)
2 cups Buttermilk
2 eggs
1 teaspoon vanilla extract

Cooking Procedure:
1. Mix all the dry ingredients and make sure to measure the flour correctly (spoon & leveled: spoon the floor onto your measuring cup and scrape with a knife)
2. Mix the wet ingredients: Buttermilk, egg and vanilla
3. Pour in the wet ingredients into the dry ingredients making sure to mix lightly. Do not overmix!
4. Lastly, drizzle the melted butter. The batter should have lumps (don’t worry, this is totally fine!) resist the urge to mix more.
5. Refrigerate for at least 10-15 minutes which will help the batter to chill and form those bubbles.
6. Preheat the frying pan into medium-low heat and add a little bit of oil or if you are using a nonstick pan then this is even better
7. Scoop a spoon of batter per pancake. I use a 1/8 measuring cup.
8. Cook for around 3-4 minutes on one side until you see some bubbles forming and the edges turns golden brown, this is the time to turn them over and continue with the rest of the batter (I’ve used the same batter to cook waffles too!)
9. Place on a plate and top with some butter, drizzle with pancake or maple syrup.
10. Enjoy!
