THE BEST STRAWBERRY PIE RECIPE ~ How To Make Homemade Strawberry Pie

INGREDIENTS:
1 pre baked 9″ pie shell crust
2 pounds or 3-4 cups cleaned and halved/quartered fresh strawberries
1 cup water
1/2 cup granulated sugar
3 tbsp. cornstarch
1 – 3 oz. package strawberry gelatin
whipped cream, fresh strawberries and mint to garnish

In saucepan on medium heat add water, sugar and cornstarch.
Bring to simmer and thicken. Once thick and smooth, remove from the heat.

Add strawberry gelatin and stir to incorporate.
Add fresh strawberries and gently stir to thoroughly coat.

Pour strawberry filling into cooled pre baked pie crust shell.
Gently level out and pour excess gelatin on top of strawberries.
Refrigerate for 1-2 hours or until set and firm.

Decorate with whipped cream, fresh strawberries and mint.
Enjoy.

PIE CRUST:
1 1/4 cup all purpose flour
6 Tbsp. cold unsalted butter cut into small pieces
2 Tbsp. cold vegetable shortening cut into small pieces
1/2 tsp. salt
4-6 Tbsp. cold water
*Add flour, salt, butter and shortening to food processor.
Pulse a couple times. Slowly add water until dough forms and comes together.

Form into ball, wrap in plastic and refrigerate for at least an hour.

Roll the dough into about a 12 inch circle and place it in the pie plate
Trim the extra dough leaving about 1″ over hang.
Fold the edges under and crimp the edges.
Pierce the base and sides of the crust with a fork.
Place a piece of aluminum foil over the crust and fill with dried beans.

Bake at 425 F for 15 minutes.
Remove the foil and beans.
Reduce heat to 375 F and continue baking
for an additional 15 to 20 minutes or until golden.
Cool completely.
