Tamale Pie Recipe
INGREDIENTS:

2 Lbs 85/15 Ground Beef
1 Large Yellow Onion (Diced)
1 Red Bell Pepper (Diced)
2 Tbsp Minced Garlic
1 Tsp Salt
1 Tsp Pepper
2 Tbsp Chili Powder
1½ Tsp Cumin
1 15 oz Can Sweet Corn (drained)
2 Cups Crushed Tomatoes
2 Cans of Mild Rotel Tomato and Green Chilis
1 Tbsp Cornstarch
2 Cups Shredded Mexican Blend Cheese
2 Cups Corn Flour Masa
1½ Tsp Baking Powder
1 Tsp Salt
1½- 2 Cups Chicken Broth
1 Stick Salted Butter (Melted)

DIRECTIONS:
In a cast iron skillet on medium heat, start browning up your ground beef. Stir in the chopped onion, red bell pepper, and minced garlic. Season beef with salt, pepper, chili powder and ground cumin. Continue cooking until the meat has completely browned and the onion and bell pepper are tender.
Stir in the corn, 2 cans of Rotel, crushed tomatoes, and then add 1 Tbsp. of cornstarch to help thicken. Let simmer for a couple of minutes, remove from heat and top with 2 cups of the shredded cheese. Set aside while you make the Masa.
In a large bowl, combine the Masa corn flour, baking powder and salt. Mix dry ingredients together. Add in melted butter. Slowly add in the chicken broth until you get to the correct consistency to spread. Spread the Masa mix evenly over the top of the meat and cheese mixture. Bake at 350 degrees for about 30 to 40 minutes depending on your oven. Insert a toothpick into the center of the Masa topping and if it comes out clean, it is ready. Let set up for about 10 minutes and Serve warm. Mmmmm so good!!!!
