SKILLET CABBAGE PIE: AN EASY, THRIFTY, AND SURPRISINGLY DELICIOUS WHOLE MEAL DINNER!
INGREDIENTS:
3 cups of shredded cabbage
1carrot, shredded
1 onion, finely sliced
1/4 leeks, finely sliced
1 tomato, finely chopped
1/3 cup of parsley and green onions
1/3 cup all-purpose flour or any kind of flour of your choice
1 tablespoon vegan mayo or oil or you can skip the oil
2 teaspoons baking powder
2 teaspoons lemon juice
salt to taste
pepper to taste
1/4 cup plant-based milk
2 tablespoons nutritional yeast, optional (recipe below)
METHOD:
Mix all ingredients in a bowl, add to a nonstick skillet or a previously greased pan, cover and let it cook until brown in low heat for about 10 to 15 minutes, flip it, cover it and let cook for 15 minutes more; or bake it in the oven for about 25-30 minutes at 185℃ (370℉).
