No Bake Peanut Butter Pie

Happy Smooth Operator Sundays mi gente! You already know how we get down with the get down on Sundays and I’m bringing it back with shomethin’ shweet! No bake peanut butter pie is what’s on the menu for today and GOODNESS GRACIOUS THIS THANG CRAZYY! You can taste the sweetness of the crust once the chocolate frosting is acknowledged on your tastebuds. This was real fun to make even though waiting for the pie to harden up in the fridge was testing my patience. Ingredients:

-125 grams medjool dates, pitted
-1/2 cup (50 grams) old fashioned oats
1/2 cup) (50 grams) finely ground blanched almond flour
2 tablespoons coconut oil
-1 teaspoon vanilla extract
1/4 teaspoon sea salt

Filling:

-1 cup creamy peanut butter (or nut butter of your choice)
-2/3 cup non dairy milk
-2 1/2 tablespoons water
-5 tablespoons coconut oil
-1/4 teaspoon sea salt
-1/4 cup maple syrup (agave syrup would be great as well)

Ganache:
-6 1/2 ounces veganchocolate chips
-3 ounces non dairy milk
1 tablespoon coconut oil

Topping:
– garnish of sea salt (optional)
