Mini Pecan Pie Tart | Just Bake It | Recipe

Recipe:

Ingredients:

Sweet Shortcrust Dough
• 2 cups All-purpose Flour
• 3 Tablespoon Sugar
• 150g Cold Butter (Chopped into cubes)
• 3-5 Tablespoon Ice Cold Water

Filling
• 3 Large Eggs
• 1 cup Brown Sugar (firmly packed)
• ¾ cup Light Corn Syrup
• 3 Tablespoon Melted Butter | and extra to brush the muffin cups
• 1 Teaspoon Pure Vanilla Extract
• 1 Cup Pecans (Chopped – into a size you like)

1. [In a Food Processor] Put the flour, sugar, and butter and process it until it resembles fine breadcrumbs. Add the little by little. Process until the dough comes together. (You can also do this by hand by rubbing the butter into the other ingredients using your fingertips.)

2. Knead the dough into a ball on a floured surface. Wrap in plastic wrap and put it into the fridge for atleast 30 minutes.

3. [In a Bowl] Whisk together the eggs, brown sugar, corn syrup, melted butter, pure vanilla extract, and salt until well blended together. Set aside. Preheat your oven to 350°F /180°C.

4. Shape the chilled dough into 2-inch balls. Place each into a 3-inch muffin cups brushed with melted butter. Forming each into a shell.

5. Sprinkle the Chopped Pecans evenly into the pastry cups. Pour the mixture evenly over pecans until the pastries are full. Use a fork to press the edges of the shell to make little decorative lines. Bake at 350°F /180°C for 25-35 minutes or until set and lightly golden and crispy. Make sure not to overbake.
