How to make EASY homemade chicken pie!

Hi guys, today’s video is about how to make chicken pie from scratch!

Ingredients

For the shortcrust pastry:
340g sifted cold plain flour
225g cold unsalted butter cubed
1 tsp salt
1 cold egg beaten

For the filling:
600g diced chicken breast
250g chopped mushrooms
1 chopped red onion
Seasoning for the chicken:
– 1 tbsp oregano
– 1 tbsp thyme
– Salt and pepper

For the bechamel sauce:
50g butter
50g plain flour
500ml milk

Recipe
1. Sift 340g cold plain flour into a large bowl and add 225g cold diced butter
2. Rub with your fingertips as shown in the video – this part takes a while so keep going until the mixture looks like breadcrumbs
3. Add 5-6 tbsp of water, a tsp of salt and mix until the dough is firm
4. Place flour on your surface and knead the dough
5. Wrap the dough in cling film and chill for 30 mins in the fridge while preparing the pie filling
6. Cook 600g of diced chicken in 4 tbsp of oil on low
7. Once the chicken has cooked add 1 chopped onion and 250g chopped mushrooms
8. While the chicken is cooking, start preparing the béchamel sauce by melting 50g butter on low heat
9. Next add plain flour in parts to the butter while stirring
10. Add 100ml out of 500ml milk slowly and whisk, then add the rest of the milk
11. Let the mixture thicken while under low heat
12. I also added some Dijon mustard (1 tbsp) and Philadelphia cheese (50g) to my sauce which is optional
13. Add the béchamel sauce to the chicken and stir
14. Next to the pot that has the sauce mixed in with the cooked chicken season by adding oregano, thyme, salt and pepper
15. Transfer this mixture to the pot you are going to cook your pie in
16. Take your pastry out of the fridge and flour your surface before rolling it out to 0.3-0.5 cm thickness
17. Cover the top of your pie filling with pastry and cut the rest off
18. With the spare pastry you can bake that separately or use it to decorate the pie

  2. Love your style of “teaching” I have never made chicken pot pie, however after seeing how easy it is I am going to try out your recipe. One thing my mom always did to ensure a smooth gravy, she would take a bit of milk or water and add it to the flour/thickening agent and stir until smooth before adding it to the pan. It’s funny what you learn just by watching your mom and grandma cook. I was always under foot, watching and taking it all in. Thanks for sharing your recipes and passion for cooking!
