RECIPE :

English PANCAKE

Ingredients

1 Cup Plain Flour
1/2 Tbsp Baking Powder
Pinch of Salt
1 Tablespoons Sugar (optional)
1 Egg
½ Cups | 310ml Milk
¼ Cup | 60g Melted Butter + more for cooking
½ Teaspoon Vanilla Essence

Method

1) In a large bowl mix together the flour, baking powder and salt with a wooden spoon. Set to the side.
2) In a smaller bowl crack in the egg and pour in the milk.
3) Add the melted butter and vanilla essence to the egg and milk and use a fork to mix together until everything is combined well.
4) Make a well in the dry ingredients and pour in the wet. Fold the batter together with a wooden spoon until there are no longer any large lumps.
5) To cook the pancakes heat a heavy based pan like cast iron over medium low heat. When the pan is hot add a small amount of butter and ⅓ cup of the pancakes batter.
6) Cook the pancake for 2-3 minutes each side. Repeat with remaining batter.
7) Serve the pancakes stacked high with butter and maple syrup. Enjoy.

Optional

You can add other flavouring to the pancakes such as blueberries or chocolate chips. Add the extra ingredients at the same time as you combine the wet and dry ingredients.

CREPE RECIPE

Ingredients

1 Cup / 125g Flour
½ tsp Salt
2 Eggs
1¼ Cups | 310ml Milk
2 tbsp Melted Butter + extra for cooking

Method

1) In a medium-sized mixing bowl combine the flour and salt together with a whisk.
2) In a seperate smaller mixing bowl whisk together the eggs and milk.
3) Pour the wet ingredients into the bowl with the dry ingredients, a ¼ at a time, whisking together until smooth.
4) Pour the melted butter into the crepe batter and whisk until combined.
5) Cover the crepe batter with plastic wrap and leave in the fridge to rest overnight or if limited for time 1 hour.
6) Heat a large frying pan or crepe pan over medium heat. Grease the pan with melted butter and pour in about a ¼ cup of crepe batter. Use a crepe tool or tip the pan around to spread the batter evenly.
7) Cook the crepe for 30 seconds to a minute or until the top has set, flip the crepe using a spatula and your hands and cook for a further 30 seconds on the remaining side.
8) Serve your crepes filled with your favourite filling.

American Pancakes

Ingredients

1 Cup / 125g Flour
½ tsp Salt
2 Eggs
1¼ Cups | 310ml buttermilk
2 tbsp Melted Butter + extra for cooking
1 tbsp sugar
Baking powder ½ tbsp
Baking soda ¼ tbsp

Method

1) In a medium-sized mixing bowl combine the flour, baking powder, baking soda and salt together with a whisk.
2) In a separate smaller mixing bowl whisk together the eggs and milk.
3) Pour the wet ingredients into the bowl with the dry ingredients, a ¼ at a time, whisking together until smooth.
4) Pour the melted butter into the batter and whisk until combined.
5) Cover the batter with plastic wrap and leave in the fridge to rest overnight or if limited for time 1 hour.

Japanese Pancakes

Ingredients

1 Cup / 125g Flour
½ tsp Salt
2 Eggs
1¼ Cups | 310ml milk
2 tbsp Melted Butter + extra for cooking
1 tbsp sugar
Baking powder ½ tbsp
Baking soda ¼ tbsp

Method

1) In a medium-sized mixing bowl combine the flour, baking powder, baking soda, egg yolk, milk and salt together with a whisk.
2) In a separate smaller mixing bowl whisk egg whites until thick foam.
3) Pour the wet ingredients into the foam bowl, whisking together until smooth.
4) Pour the melted butter into the batter and whisk until combined.
5) Cover the batter with plastic wrap and leave in the fridge to rest overnight or if limited for time 1 hour.
6) Heat a large frying pan over medium heat. Grease the pan and molds with melted butter and pour in about a 2 tbsp of batter in the mold.
7) Cook it for a minute or until the top has set, flip them using a spatula and your hands and cook for a further 30 seconds on the remaining side.
8) Serve your pancakes with butter and maple syrup.
