Making No Bake Cookies

Ingredients:
1 stick butter or margarine
1/2 c milk
2 c sugar
4 Tsp baking cocoa
2 tsp vanilla extract
1/2 c peanut butter (optional)
2 1/2 c quick cooking oats

Directions:
Bring butter or margarine, sugar, and milk to a boil over medium heat, stirring frequently
Full boil 2 1/2 minutes
Remove from heat
Add vanilla, peanut butter, and oats – mix well
Drop onto foil or parchment paper and allow to cool/set

my students have asked me to do somecooking videos and so I’m gonna do thatand this first recipe is going to be nobake cookies and I will like I willinclude a link for the recipe andinstructions at the bottom of this videoyou can also check out my blog at[Music]www.tiffanycano.com cooks it’s gonnabecome more creamy otherwise it justbecomes very crystallized and I this wasthe ingredient I was missing the otherday when I tried to make these and Isubstituted some chocolate milk mix andit just really didn’t taste this one Ihave my husband get me some baking cocoaat the store so this is just Hershey’scocoa same stuff I’ve been using mywhole lifeso I am going to need four tablespoonsof the baking cocoa and so I you canjust kind of gently shake it off or youcan use the lid to smooth it off to makesure you’re getting more tablespoons Idon’t think it hurts to get a little toomuch but it might not taste the same ifyou get way too much okay three and fourso you can see that took a pretty bigjump out of my baking cocoa I guessthat’s a good thing my husband bought metwo canisters when he went to the storeokay so this is all we need for rightnow and I’m gonna turn the heat on tomedium we actually do not keep our knobson the stove because one if our grandsonis here we don’t want him to be able toreach them and two we discovered thatbecause these are on the top they tendto get pressed down when you set thingson the stove and they’ll turn on and sowe started doing this to be safe wehaven’t had any more accidental firessince we started doing that not that weactually have fires butall right so typically I would use avery heat-resistant spoon for this and Ihave a wooden spoon this time I’m gonnause this one with the heat-resistantrubber type materials probably siliconeand so what you’re gonna do is you’rejust gonna gradually stir this and justkind of you want to make sure it getswet all the way through and as the sugarheats up it melts and so it will becomemore and more liquid so we’re taking asolid and turning into a liquid byapplying heat get a little bit ofchemistry in here and he doesn’t evenknow it okay and usually you want to domedium heat I have it kind of mediumhigh so it’s at about a six you don’twant to get it too hot or you willscorch your sugar and another thing thatyou can do is to spray some non kicknonstick cooking spray into your panbefore you start but this because of themargarine I usually don’t have too muchtrouble with it sticking and a lot ofyou probably have nonstick pans myhusband and I finally gave up on thosejust because our kids kept scratchingthe nonstick surface and it was drivingme crazyand it would ruin the pan so we finallyjust went back to good old-fashionedaluminum or stainless steel and you dohave to put a little more elbow greaseinto cleaning them but you really can’thurt them sometimes you just pouring theAjax let it sit and then scruball right as you can see all of my sugaris moistened now and it’s starting tomelt I will keep you want to stirconstantly you don’t want to just let itsit on the heat because it will scorchand I usually kind of like scrape thebutter just to help it speed it up alittle it probably doesn’t really matterbut I am stirring this constantly butgently you don’t want to stir it hard orfast because you will splash it out andas it gets hot it can really burn you soagain be careful you want to make surethat your parents are helping you withthis do not ever cook without yourparent’s permission okay so we are justgoing to continue to let that cook I’mgoing to let it sit for a second becauseI’m going to run and grab somethingreally quick and hopefully it willcontinue to melt but notokay so what I have that I can get itwas my parchment paper and I love thesepop-up sheets that can fit on the cookiesheets I use them all the time I alsouse them when I am painting becausethey’re really good for settingsomething I’ve just painted on so thatit doesn’t and I can smell that startingto scorch a little bit I need a stirespecially when I’m working with spraypaint and I can once it’s dry I can setit on there so that the paint doesn’tget damaged when when I’ve had the mailthings I’ll usually wrap it in parchmentpaper so that it doesn’t get humid andand the paint come offit’s a little extra information in therefor youall right now I can tell maybe you cantell – this is as it heats that sugar isbecoming more and more liquid and it’sgonna get thinner and that’s the wholeidea we want all of these ingredients todissolve together this is what we call asolution in chemistry so we took theseparate ingredients put them togetherand we want them to essentially bondtogether so this is a solution it hasmore than one thing in it mixed togetherwhich makes a whole new thing and inthis case this is chocolateoh let’s see how thin that’s gettingit’s really just pouring off of thatspoon now so I’m grabbing a few moreingredients one of them is vanilla youcan use real vanilla or imitationextract this is just dollar generalspecial here right we are going to bequick cook oats so Oh meal the kind ofcooks in a minute the other coins willnot work very well because it won’t getas soft as it needs to get the lastingredients that I’m going to get thatis optional you do not have to use thisingredient and we are going to do peanutbutter and I am not allergic to peanutsand I love peanut butters but I havegrowing up I had friends who wereextremely allergic to peanuts sowhatever we made stuff for our church wenever put peanut butter or peanuts in itbecause we wanted our friends to be ableto enjoy it so I know some of you areallergic to peanut so obviously youwould not put the peanut butter in thereit is completely optional these willtaste great even without it and I’vemade it both waysI can also tell you from experience ifyou’re out of white granulated sugarthat brown sugar works just fine forthis recipe in fact my favorite favoriteway to make it is with one cup of whitesugar and one cup of brown sugarI didn’t use the brown sugar this timejust because I have a limited supply andso the next thing I need it’s all meltedand you can see it’s starting to bubblestarting to boil and that’s what we wantwhen it comes to a full boil so when thewhole surface is boiling then I’m goingto start my timer and I’m going to timeit for two and a half minutes okay it isa full boil nowokay so we want it to boil at a fullboil for two and a half minutesI might go just a little bit overbecause it took me a minute to rememberhow to set the timer on my microwave oohand I can smell it getting hot I’m gonnaturn down the heat just a little bit Idon’t want it to scorch and it’s okaybecause this pan is a little bit toosmall I can tell that I’m gonna have tomix my cookies in a different dishordinarily I use a bigger pan and I canjust put the oatmeal in here but that’snot gonna work this timeyeah it’s getting a little messy becauseit’s a little too too shallow okay andshallow means that the pan is not deepenoughit’s like going into the shallow end ofthe the water at the pool it’s just notvery deepso I’m just continuing continuing togently stir this to keep it fromscorching because it is extremely hotnow you also want to be very verycareful you need your parents help withthis because it is extremely hot and itcould really hurt you why we say youmust have your parents permission andhelp to make recipes okay I’m justwaiting for the timer to go off it’sbubbling it’s a good thing I have a longspoon or I’d be getting burnt thosebubbles pop and they kind of spit at youa little bitokay soon as the timer goes off I’mgonna turn off the heat and I’m gonnaremove the pan from the burner when Iwas a girl we always had gas stoves andso you could just turn off the heat youdidn’t have to remove it but on electricstoves it stays hot for a long time soyou have to really just remove the wholething okay there is just a few secondsleft and I know I had a few extraseconds so I’m gonna go ahead and turnoff my heat and I can feel like kind ofwant to stick to the bottom there we gotimer just went off so I’m gonna removethat from the burner and I want to beextra careful not to touch that hotburner I have done that before and it isnot a pleasant experience okay now atthis point I’m gonna put in 2 teaspoonsof vanilla and again you can use toequitation vanilla extract so I’m gonnaput in 2 teaspoons me and that burnershot I’m trying to be really careful youdo not want to see me demonstrategetting burntokay I’m gonna stir that in sometimes ifit’s still really hot it’ll bubble up sowhen you put the vanilla in stand back alittle bit oh my gosh that smells sogood you guys are gonna be so hungryfrom looking at this video all rightyou’re supposed to put it in half a cupof peanut butter and I do not likehaving to clean a peanut butter cup whenI need some measuring cup so I just usea big tablespoon and I will just put twobig scoops of this spoon of the peanutbutter in there it’s so much easier towash this thingand I don’t think you can put too muchpeanut butter or not enough it’s gonnabe good but it’s the only ingredient Irecommend not measuring carefully andyour parents might appreciate this thisis my trick for clinging the spoon sothat it doesn’t make a big mess in thesink I wipe it all off with a papertowel or napkin and then I put it in thesink to be washed nobody likes to touchit when it’s been sitting in the soapywater when it’s got all that peanutbutter on it okay so now I’m just gonnastir it to dissolve the peanut butter ifI was not putting peanut butter in it Iwould already be adding the oats butsince I put peanut butter in it I wantto make sure it’s nice and mixed in nowI think this is still technically asolution but the peanut butter doesn’treally dissolve into the solution aswell so maybe it’s more of a mixture andin fact that is true it’s it’s a at thispoint it’s a mixture because the peanutbutter it spreads out but it doesn’tbecome part of the solution so if I if Iwere to just let it sit the peanutbutter would probably separate and I’mguessing it would move to the top notreally going to experiment to find thatout cuz that would be a waste of somereally good ingredients in my opinionalright so then the last part is theoats we’re going to add a two and a halfcups of oatmealso here I have the oats and this haslike a horse about so I’m just gonnapour it carefully I don’t want to getway too much about a half you probablyshould measure that carefully oh and Iforgot I was gonna do this in a bowl soit would spill oh well okay so now I’mjust mixing it to get it all mixed in myparchment paper down when I was a kid Ialways used oil I could just put tinfoildown on the kitchen cabinet and just putit directly on there that works hey nowit’s getting nice and stirred in scrapethe edges Oh smells so goodthe hardest part is waiting for it toactually dry if you if you get it thisis a pretty good mixture here it’s alittle moist so I could add just alittle more oatmeal just so that it’lldry out quickeryou know what Mel’s good for youokay and then the next thing I’m gonnado is I’m just gonna put spoonfuls onthe paper these are going to be a littlebit big sometimes if I’m making them foran event I’ll use a cookie drop tool tomake sure that they have a uniform sizebut these are just gonna be picked outaround by me and my families and I willdo all the cleaning in just a little bit[Music]all right so we have made our no bakecookies and there is just a little
