how to make perfect spritz cookies everytime now these are fairly traditionalfor most families around the holidaysbut some people kind of struggle withthese a little bit so let me take allthe guesswork out of it for you and showyou how to make perfect spritz cookiesevery time these the immediate sintramead so let’s get started I’m going tostart off using a large bowl here andI’ve got two sticks of softened butterin there this is unsalted butter and tothat I’m going to add in 2/3 of a cup ofwhite granulated sugar and using a spoonI’m just gonna cream these two togethernow I’m using a wooden spoon hereobviously as you can see but if you wantto use a stand mixer or an electric anbeater go ahead and use that but this isa fairly simple dough so I’m just gonnause the spoon and bowl and once thatcomes together and you’ve mixed that forabout a minute to kind of dissolve alittle bit of that sugar into the butteryou want to add in two large egg yolksthese are just the yolks here as well astwo teaspoons of milk use whateverpercentage that you want this isactually gonna keep our dough nice andsmooth and easy to work withI’m also going to add in two teaspoonsof pure vanilla extract as well as halfa teaspoon of pure almond extract thisis gonna give those spritz cookies thetraditional almond flavor it’s just alittle hint of almond flavoring youcould leave it out if you want to or ifyou want to do lemon spritz you could dothat and then just using my spoon againI’m going to slowly mix this togetheruntil it is incorporated and once thatcomes together I’m going to add in myall-purpose flour also known as plainflour outside of the United States aswell as a quarter of a teaspoon of saltnow I know somebody’s gonna ask me ifyou could use self-rising flourdo not use plain flour you don’t wantany leavening in this dough whatsoeverthat’s gonna kind of distort yourcookies and make your cookies have kindof funny shapes they’re not gonna stayin the shape that you pressed them outin so just use plain flour for this andyou want to slowly work that flour andsalt into your wet ingredients until itcomes together and forms a dough nowonce that dough came together I dividedthis up into three separate bowls hereI’m going to color two portions of thedough one red and one green and use onejust playwhile you just leave it light but to thegreen one I’m going to add three dropsof Americanos leaf green hashtag notsponsored and for the red one I’m goingto do three or four drops of americolorsuper red and using a spatula I’m justgonna mix this together until thecoloring is evenly dispersed throughoutthe dough now before I press on mycookies I want to take a second here totalk about the cookie presses if you donot have a cookie press and want to buyone this plastic one here is usuallywhat you’re going to be able to find inmost department stores nowadays theyhave a selection of plates with them andthey have a squeeze trigger type handleto them they work perfectly fine Ireally like mine however most people aregonna think of this when they think ofcookie press it’s just your standardaluminum cookie press that everybody’sgrandmother used these also work justfine there’s a little bit of a learningcurve there but it’s not too bad I’llshow you how to use both of them hereand this one you actually turn the knobon top to press out your cookies but useeither cookie press that you want I’mgoing to start off here with the new onethe plastic one and to fill this up I’mjust gonna take small little pieces ofdough and start shoving that into thepress now you want to take small pieceshere and press it down and make surethat you don’t get any air pockets inyour dough here and when you get it fullgo ahead and pick out a plate that youwant to use I’m gonna use the Christmastree one here for this for the greenones go ahead and pop that into your endand screw it on and give the triggerjust a couple squeezes until the doughjust barely starts to come out and thenwe can go ahead and press out ourcookies now I’m using a plain standardcookie sheet here this is ungreased andbasically are you gonna do for thiscookie press is set it down on yourcookie sheet make sure that it’s sittingflat and squeeze the trigger once onepress of the trigger equals one cookiedon’t worry your first couple cookiesare always gonna be screwed up so don’tworry about those but you want to spaceyour cookies about an inch apart thesedon’t spread a whole lot so you can putthem close together and you just want togo through and press out all of yourcookies until you’ve used up all of thedough in your cookie press now the nicething about these new cookie presses isthat they are pretty much foolproof andyou can pump out a lot of cookies reallyquickly so if you’re going to be doingdozens and dozens and dozens of spritzcookiesdefinitely investment in one of thesenew cookie presses now if you’re gonnause one of these vintage aluminum cookiepresses it is basically the same conceptyou’re gonna stuff the press full ofdough make sure that there’s no airpockets in there but again pick out theplate that you want to use and screw onthe bottom and then take your knob andtwist that down until the dough juststarts coming out of the plate on thebottom as well and just like before putyour cookie press down flat on top ofthe cookie sheet and with these ones youwant to turn the knob on top thedirections say a quarter of a turn Ifind just a little bit past thatactually closer to a third of a turn nowyou’re gonna have to kind of play aroundwith your individual cookie press thesevintage ones every one is different sojust play around with it and if you’rehaving some trouble like I am here withyour donut sticking to your cookie sheetcould be one of a few different reasonshey your cookie sheet is warm you needto use a cold cookie sheet B it could bethat there’s grease on there or see thatyou’re not twisting the knob quite farenough but like before now would be thetime to add your colored sugar and yoursprinkles if you want to decorate thesebeforehand I’m just using red white andgreen colored naan brows here and thenyou want to bake these in a preheated350 degree oven for between nine andeleven minutes you want to make surethat they are baked all the way throughhowever you don’t want any color on themwhatsoever and then let them rest for acouple minutes on the cookie sheetbefore you remove them to a wire rack tocool completely and then let your cookiesheet cool down and then you can pressout some more cookies and continuebaking but there you
