Preheat oven 375. cook time 12 to 15 minutes
1-cup unsalted butter.
11-cup chopped nuts
Raspberry preserves or apricot or strawberry
Beat butter and sugar until light and fluffy
Blend in egg yolk ,extract and salt add Flour. Mix well. Beat egg whites until frothy. Shape level tablespoon of dough into balls , dip balls in egg whites. Roll in nuts place over on ungreased cookie sheet flatten slightly. Indent center; fill with preserves 3 dozen cookies.
