[Music]hey everybody and welcome back to Bob’sworld quarantine Edition so today we aregoing to tanning or ingredient recipefrom the book on Amazon called bakingbread for beginners and using the metricsystems we are gonna combine all theseingredients and then more ingredients tomake a funmulti-grain artisanal Oh first of allthose four ingredients that you need tomake the basic loaf of bread are flourwater salt and yeast once you’ve gotloose ingredients you need a big breadbaking bowl I’m using this one that camewith my bread mixer the chef tronicwhich you can get on Amazon first whenyou bake bread you have to make surethat you have the right temperature Ihave this thermometer it is Harborinstant-read digital thermometer then itgot an Amazon in my kitchen it is 75degrees right now I’m gonna put in thewater you want your water to be around70 to 75 degrees it is 73 so it is Ohactually it’s 72 you can see perfectyou need a kitchen dish filled skill Ihave this a tech City digital kitchenscale I’m going to turn it onzero it out I have this cup see how muchit weighs now I’m going to zero it outwith the cup on it see how much water Ihave I have about 406 grams of waterwhich is a little over of what I need soI’m going to dump a little bit out we’vegot 300 o 375 right on the dock perfectand we’re gonna put this in here in yourfriends’ll and eight grams of yeastwhich I already measured out and you canalso get the Eastside Amazon what can’tyou get on Amazon so I’m going to bespreading the yeast out it’s importantto spread it out because you really wantthese to expectI just wrinkly all around so it startsexplodingbasically supported ouryoung vibrantnot goingback upnow you’re going to wait for the ants itneeds to activate alternating means theyeast explodes and if it expands it getsreally bubbly that makes your bread riseso I’m gonna take this activating yeastand water my shirt I’m gonna put itbehind me so we can get some other stuffdone now we are going to measure out theflour we have about we’re really close197 throws a little bit forward I gotthis flour containerOh Oh little bit too muchOh perfect 200 grams boomall right now we have two grams to makethrow a basic run all you need is 500grams of flour 500 550 that range I havethis 200 grams of white flour thenhere’s where it gets a little crazyhundred grams of whole wheat flourduring the quarantine I was able to findthe small package of rye flour andget your rye flour but now that thingsare starting to normalize you can getlots of things at the store and I’mAmazon I found 25 pounds of rye flourfor $35 for a great deal oh this is 25grand pounds of rye flour for $35 wellit’s heavy also I have some other grainsto make my bread multi-grain and crazy Ihave 40 grams of steel-cut oats whichyou can get at the grocery store orAmazon I have 40 grams of bulgur whichis a grain found in the middle-eastSyria I had 20 grams of teff flour whichis the smallest grain that you can useit’s actually quite heavy because it’sso so fine so it weighs a lot more thanlike oopsand I have 20 grams of flax meal whichyou can also get on Amazon up occurs orat the grocery store it and then chiaseeds 20 grams Amazon or the grocerystore with all of these different greensand my white flour my wheat flourit equals around 500 to 550 500 60 gramswe’re going to put it all together andwe’re gonna be a fabulous Multi Grainrotational bread this is what it lookslike when the yeast is blowing up andactivating now you’ve seen my activatedyeast we are going to put in the whiteflour because yeast likes to eat thesugars of the white flour here we gonext I’m gonna put in all the wheatflour rye flour not 25[Music][Music]last meal and the chilies boom now thatI have all of my grains in a bowl I’mgoing to mix it up for this I’m going toturn it onto oneis mixing upwe’re gonna stop this and add some ofthe salt this is 10 grams of salt youwant to add the salt a little laterbecause the salt slows down these fluffybread so and now we’re going to continueto ace it[Music]now I’m gonna stop it in push off thetop we’re gonna push all these littlebaby bread nuggets down to the breadfamily okey-dokey so you can make thisbread however you want it to be it’sjust a basic bread baking recipe buttoday I decided hankering for Italianchallah breadso I have 10 grams of black olives I’mgonna pour in here I have 10 grams ofgreen olives yesI have some Italian seasoning which hasno salt in it by the way[Music]about 5 grams of Italian seasoning andI’m going to put the lid back on and[Music]and they all of the olives have mixedaround now we need to need it somepeople like to use their hands and eatit but I prefer not to get dirty so I’mgoing to use this spatula kind offroster thing to fold it when you foldit and when you need it it createsglutinous structures we’re also going touse the mixer to eat it but if you don’thave a mixer look at this view your hand[Music]I just needed the breadwith the spatula and with the mixer for30 minutes every now and then I wouldtake do you really want your doughymixture to absorb the moisture so it’sthe most yummy bread possible next I’mgoing to be shaking it there are variousways of shaping the bread you can use abread bowl and I got these on Amazon ifyou want your typicalImperial fancy load you can use a Dutchoven which is also kind of nice kind ofhomestyle or you can use what I’m doingand you can use this bread flock toshape it into a beautiful back ends youcan’t put the dough directly on thebread cloth at least not right now ithas to be really seasoned otherwise thedough is going to stick to the breadclock and then you’re not have any badbread to bake so I am going to use thisparchment paper which guess what I alsogot on Amazon I cut it into four piecesand I’m going to put the bread mixtureon these pieces these are already brownbecause I have put these in the oven andI have used these a few times so youdon’t have to just throw them away ifyou don’t have that much space or don’tlike to buy things that often you canreuse them then you’re helping theenvironment too we’re done with themixer all we need to do now is scrapeall these little pieces off and get ridof this big pumpkin thing[Music]now it’s time to shake our bad guys I’mgoing to use some flour to powder myhand so the many super dirty even thoughthey’re probably gonna be super dirtybut there’s one little baby back yet sowe use some white flour and now we’regoing to use rye flour bigger amount[Music]come on red rolling on the big wheelskeep on burning now I think it’s turningyou might want to use the right flourbecause it blends in a little bit better[Music]all roaming Chafin it shaping in okayso we started with just four ingredientsflour water salt and it’s and eat andthen the essence olives some bulgur somewheat flour and now we’re going to makethem beautiful I got these herbs it’sjust a packet of different herbs at thefarmers market and some basil and somesun-dried tomatoes and Italian seasoningand garlic powder and we’re gonna stickwith this to me most beautiful anddelicious ever so I like to put it inand gonna really smash it in herebecause you don’t want it to bake and beearth to fall off so I really push it inthere and some tomato juicenow I’m going to sprinkle some moreItalians using this super Italianwho doesn’t like that galaxy can seeI’ve decorated these little baguettesand bigger Beckett’s beautifully to looklike an artisan and I’m going to waitfor them to rise for an hour if you wantthese to be more Betty and less flat Iwon’t be speed kind of flat because Iwant just to have more of like afocaccia kind of idea up to it you canbunch it up and then it won’t makesquishier so little rides taller insteadof Y so it’s just an example of how youcan bunch it up and after I’ve waited anhour for these to rise I’m going to putI’m gonna bake them on my handy dandyceramic slab that you’ve got it I alsogot on Amazon and the other as you cansee these love these Beckett’s they havereally expanded this fees are justgigantic I was not expecting them to bethat big at all and there’s beautifulbirds and everything else so now we’regoing to preheat the oven and put thiswater underneath so thatthe moisture will come through I’m gonnaput this slide that I got on Amazon[Music]it goes on the top rack so then thewater will go on the bottom okaythick 500 degrees and then we’re goingto turn it down once it’s finishedreading we’ll need to the breath listento 350 but for now it’s turning up to500by upping the ages at 500 degrees I’mgoing to turn it down to 350 fly thisthing of water underneath the ceramicslaughs and then I’m going to put two ofthese little breads on this baking andI’m going to slowly slide it onto thisrunner all right[Music]here we go putting these little baby redand do the baby breads first[Music]on[Music]boom I’m going to close up the oven butwe have about 15 more seconds so I’mjust going to take these little puppiesout be very careful[Music]because it is[Music]oh look at these little babies lovegorgeous the spices stayed on which I’msuper are you know I’m just gonna letthese dry it and try them I put theother ones in the oven and now I’m gonnatry some of this very hot of course gotsome sun-dried tomato rosemary piecesgot blow on it you can see how the yeastexpanded we’ve got some good bubbles[Music]well I just got these last two elbowsout of the oven I’m going to bring themto my friend and surprise her so let’sgohey girl you’re so welcomeplease have your mask thank you
