This spicy chicken filled bread is my teenage love. I used to bake for whole family. There are sweet memories associated with this savoury soft bread.
The dough used is my famous multi purpose dough and filling is Pakistani tikka flavour chicken sauteed in little oil along with lots of green onions, coriander leaves and green chillies.
Ingredients and method for dough:
Mix one cup warm milk with 1 egg, 1tsp salt, 2 tsp sugar, 2 tbsp instant dry yeast and 8 Tbsp olive oil. Add 3 cups of plain white flour. Knead well to have a smooth dough ( 5 to 10 minutes). Cover after coating with oil and let it rest for 1 hour.
Marinate 250 gm boneless chicken in 3 Tbsp home made yogurt and 1 Tbsp tikka masala for 30 minutes. Cook till tender. do not dry the marinade completely. Remove chicken and shred with fork. put again in same pot with left over marinade add 5 to 6 chopped green onions (green part only), chopped coriander and 2 to 3 chopped green chillies. Mix well over medium heat. Add 1 serving spoon of plain flour and stir for a minute. Add 1/4 cup of milk and stir till thickened. Filling is ready.
Preheat the oven to maximum temperature.
Roll out 1/4 of the dough if you want to make bread of same size as in video. Fill and shape as directed. Bake for 15 minutes after giving egg wash and lightly sprinkling with oregano and basil leaves.
The full dough yields two big size breads.
If u want to make breads for crowd. make the filling of 1 kg chicken and increase the quantities of spices and other ingredients accordingly.
