How to make Fluffy Waffles (Souffle Waffles)

Ingredients:
– 3 eggs
– 2 cups buttermilk (Can use 2 cups of regular milk combined with 2 tablespoons of vinegar)
– 1/3 cup vegetable oil
– 1 1/2 cup all-purpose flour
– 1/2 cup cornstarch
– 1 tablespoon baking powder
– 1/3 cup granulated sugar
– Optional: 1/4 teaspoon salt

Directions:
1. In a bowl, combine all of the dry ingredients together, minus the sugar, and whisk together, then put aside for now.
2. In two separate bowls, separate the egg yolks and egg whites. Then put the egg whites aside for now.
3. Combine all of the wet ingredients together into the bowl with the egg yolk, minus the egg whites, and whisk together.
4. Combine the buttermilk mixture with the flour mixture and whisk together.
5. Use the egg whites to make a meringue. To do so, beat the eggs. Once the egg whites become frothy, start adding the sugar in gradually, a little bit at a time. Continue to beat the eggs until stiff peaks form. The eggs should be able to stand on it’s own.
6. Fold the meringue into the buttermilk, flour mixture, making sure not to deflate all of the air from the meringue.
7. Spray some non-stick cooking spray onto the waffle iron. Add the batter into the waffle iron until it’s filled.
