hello and welcome to Nikki world andtonight I am starting the dough for myleash waffles from Belgium I’m reallystretching myself this time because I’musing yeast which I’ve never used beforeI’m also needing a dough without a standmixer because I don’t own one and alsonot really know how to do or just can’tfigure it out and I might be smart to myown after all this meeting um so we’regonna go ahead and get started so I havea bowl of warm milk and some sugar hereI warmed the milk up a little bit toomuch so okay I think it’s perfect now Iwas waiting for it to cool back down I’mgoing to add a tablespoon of yeast whichI have no idea how much juice is in herealso good for a while and I’ve neverbeen brave enough to use it so I don’tknow why I’m so scared right but I amwell so I’m like sort of watching theGrammys so these waffles are comes theseleaves waffles are coming with me tobachelor night tomorrow so any bachelorfans out there get ready all right soI’m gonna move put that in thereI don’t know do you stir it there with aquick stirand then I’m supposed to let it sitcheck back to ten minutes so I’m gonnado thatand try to look at the rest of thisrecipe and see if I can do ithey I’ll be back a little bit looks likethe yeast did what it was supposed to sowe’re gonna go ahead and keep workingwith it um I’ve got some eggs that I’vetried to get to room temperature I’m notsure how well I did cuz I forgot to takethem out in time I’m so I’m going to addthose in hereand a cup and a half of flour mix thatall together and then super-weird is tolike just set two and a half cups offlour over it and let it rise for 90minutes so that’s my plan so itdefinitely rose I’m gonna be adding somemore ingredients and mixing it alltogether so hold on let me checkuncover it I’m going to add it smellslike yeast um some brown sugar salthoney and vanilla I don’t know what touse to mix this I think it is a handbeater wants me to beat this in and addingredients at the same time so I’mgonna need a mixer to do that here we gotablespoons[Applause]sugar salt and then I’m going to add twotablespoons of honey and 1 tablespoon ofvanilla as I am mixing and I’ll addbutter two tablespoons at a timeand I’m going to mix it for four minutesat medium well let it rest for a minutethen mix for 2 more minutes then restand repeat until dough ball is up on thehook here we go this is all going tohappen by hand darlingyou can’t use a hand mixer my lessonokay so I’ve got Faldo here I don’t knowyeah I don’t knowI needed it right and just I did one ofthese motions where I like well it upand press it down until it forms a doughball it’s pretty sticky dough but I’mgonna put it back in the bowlcover it that’s to let it rise for fourhours which it’s almost bedtime sothat’s not happening but we’ll put it inthere let it rise as much as I can andthen I got a punch it down and then Igotta cover it put it in the fridge andlet it rise some more so that’s a planno no I’m at Jeff tomorrow night to addin the pearl sugar and make them intoapples so here’s hoping they turn outall righttime for some fun facts about Belgiumso these leash waffles that I made arejust one of over 30 types of wafflesthat they have in Belgium you love theirwaffles there they also have um a lot ofdifferent potato dishes ahfrench fries weren’t invented in Belgiumso that’s pretty coolthey’re also world famous for theirchocolates if you had any Belgiumchocolate Belgian chocolate you shouldget them um there are other fun factsthey have three national languagesFrench German and Dutch you can find allof them on road signs and it’s kind ofconfusing because things will havedifferent cities will have differentnames based on which language they’retalking about one of the cities inBelgium Antwerp is the diamond capitalof the world 84% of the diamonds in theworld go through Antwerp for cleaningcutting all those fun things the mostinteresting fact that I found out aboutBelgium is that after their election onJune 13th and 2010 they went fivehundred and forty-one days without agovernment breaking all world records ofgovernment lists countries so prettyinteresting now back to the cookingplease excuse my bachelor night attirelooking rough but that’s okayall right I’m going to add some goldenpearl sugar into me and waffles Oh soI’m going to go ahead and put a cup anda half of it in it and I’m just gonnalike put the dough out on the flouredsurface and just need the wafflestripper the pro sugar into it a littlebit at a timeoh so prettyuntil it’s all mixed in and then I willdivide it into I wanna see the promptsugar pretty we’re going to eat waitsure thank you Stu hey I’m gonna getkneading[Music]all right so I think the that the pearlsugar is pretty evenly distributed nowum my sister is a baker ashley Shannashe must be ripped because that was verychallenging but I didn’t even need itthat long anyways I’m going to breakthis up into 14 equals chunks and I’mjust gonna let those rest for I guessprobably until um the guests come overand then I’ll get them on the wafflemaker so the trick with these is thatsugar burns if it is too hot so becauseit’s got all these little pearl sugarsin it you have to be really careful andtraditional waffle makers run really hotso I’m gonna have to do some fancyfinagling where I plug it in heat it upput my waffles on it unplug it and hopethey don’t burn so that’s my plan Idon’t know if I’ll be able to show youthat step exactlyI will just show you silently because myguests will probably be here by thatpoint and I always feel awkward filmingcooking in front of my guests so um I’mjust gonna break this up and the restand I’ll see how I turn out when Iguests will see how they turned out whenour guests get here[Music][Music]all right so this is a bachelor crew wegot Zach againCasey oh let’s see ed and we’re missingtwo founding members but okay all rightand Buddy who is desperately trying toget some wafflessure[Music]yeah perfectjust like you
