Chicken Pie. (Brazilian Style)
Recipe:-
Ingredients:
Chicken Filling:
1. 2 tablespoon canola oil (or olive oil)
2. 1 onion, sliced. (Medium size)
3. 3 bell peppers. (tri-colour, medium size)
4. 3 chopped tomatoes.
5. ¼ cup chopped black olives.
6. 1 chicken breast, cooked and shredded.
7. 1 cup of coriander, finely chopped.
8. Salt and pepper, as per taste.
Batter:
1. 2 cup milk. (240 ml)
2. 3 large eggs.
3. 1 cup cornflour.
4. 1½ cup all-purpose flour.
5. 4 tablespoon grated cheese.
6. ¾ cup canola oil. (approx 150 ml or olive oil)
7. 1 tablespoon baking powder.
8. 1 tablespoon salt.
Method:
Chicken Filling
1. Sauté the onion in the canola oil (or olive oil)
2. Add all the three bell peppers at once.
3. Add tomatoes.
4. Add black olives.
5. And the bell peppers.
6. Add salt and pepper to taste.
7. And sauté everything for 1 or 2 minutes.
8. Add chicken.
9. Turn off the heat, add coriander and mix everything well.
10. Set it aside, and let it cool.
Batter:
Mix all the ingredients of the batter in a bowl using a hand blender or a mixer grinder until its smooth.
Assembly:
1. Grease a silicon mold (9 inch) with melted butter (You can use a baking dish as well).
2. Pour half of the batter into the mold.
3. Then put the chicken filling into the batter.
4. Spread everything evenly.
5. Pour the remaining batter on top of it.
6. Preheat the oven to 170°C for 10 minutes.
7. Bake for 50 to 55 minutes at 170°C.
8. Poke a toothpick in it and check if its baked properly. (It should come out clean)
9. Serve warm.
