Ingredients you’ll need:
Tortilla:
2.5 cups (360g) all purpose
1tsp (8g) baking power
2tsp (7g) kosher
1/2 cup (100g) pork fat
2/3 cup (160ml) hot water

Roast Chicken:
2 Split bone in chicken
1 bunch parsley
2 heads of garlic
orange slices
olive oil for drizzling
salt and pepper to taste

Spice Crema Sauce:
1/2 cup (125g) sour cream
2 tablespoons (25g) mayo
2 tablespoons (25g) jalapeño salsa
2 teaspoons(4g) gar pow
1.5 teaspoons (2g) chipotle
2 teaspoons (3g) sweet paprika
Juice of 1 lemon
Salt to taste

Herb Salad:
1/2 head iceberg lettuce, thinly sliced
1/2 bunch cilantro, rough chopped
zest of 1 orange.

clout Ipersonally actually have never had onebefore I don’t really know what toexpect out of this one but I have a goodfeeling that we might have the upperhandI brought before dinner with all thatsaid let’s do this shall wewe’ve good old-fashioned Bell look atthat Oh can I get two chicken CrunchwrapSupremes awesome thank you we haveapproximately two hours to consume andthen immediately hit the restroom we gotthe bag five years it’s very flat okayI don’t expected it to be thicker likefilled to the brim doesn’t taste bad ittastes like a mediocre tortilla andlettuce those are the flavors that arein my mouth right now the dough startsnot crunchy so that’s all right there’snothing else for me to say that’s lookdude you’re gonna make your ownCrunchwrap supreme you should make yourown tortillas first so with a bowl todayyou’re gonna add two and a half cups or360 grams of all-purpose flour oneteaspoon or eight grams of baking powdertwo teaspoons or seven grams of koshersalt give that some whiskey businessuntil thoroughly combined and thenyou’re gonna add half a cup or a hundredgrams of pork fat now wait I used baconfat because duh smokey boy hours thenusing two forks are gonna kind of blendthat together until you get nice littlecrumbles like this evenly dispersed ofcourse and then you’re gonna add 2/3 ofa cup or 160 milliliters of hot waternot boiling hot mix it all together andso you get a nice little dough knead ituntil completely smooth and all the drybits are incorporated place it back inyour bowl cover with plastic wrap andlet that rest for 30 minutes to an hournow while that’s resting we’re gonnamake our chicken now take a 10-inchoven-safe pan at one bunch of parsleyspread out evenly two bulbs of garlicsliced in half some orange or lemonslices drizzle that with a little bit ofolive oil and then I’m gonna take twoskin-on bone-in chicken boobies seasonthem generously on both sides with saltand pepper make sure that they’re patdry and then place him in a 450 degreeoven for about 30 to 40 minutes or untilthey reach an internal temperature of160 degrees Fahrenheit and they’re juicyand crispy okay so your tortilla doughis done resting now I’m gonna divide itinto about five to six large ballsgenerously flour work surface generouslyflour your balls and then roll them outas thin as they can go they should beroughly about 12 inches in diameter soanother trick is to roll them a littlelarger in theuse a bowl to then cut around and makeyour perfect shape heat a 12-inchcast-iron pan or a large Kamal overmedium-high heat take a rolled outtortilla plop it in there you’ll see abubble up real real fast once the bottomgets some medium char flip it over letit go again for another 30 seconds oruntil medium char pull it off and youhave a beautiful burrito size tortillarinse repeat with all your tortillas nowwe need two more elements one of thembeing your fried tostadas this is veryvery simple now of course you can makeyour own corn tortillas you follow thedirections in the back of the cornpackage or you mix them lies your owncorn if you’re an OG you flatten themout you cook them now once they’vecooled down or you can use pre-made corntortillas your thing when you drop theminto 350 degree Fahrenheit oil a shallowlevel just enough to cover and you’regonna fry them for about 2 to 3 minutesflipping occasionally until there’s verylittle bubbles and they look nice andquit be like this immediately pull fromthe oil transfer to a wire rack seasonthem with salt while they’re still hotseason generously and there you go yougot a tostadanow instead of nacho cheese we’re gonnamake a spicy crema in a medium sizedBowl combine 1/2 a cup of 125 grams ofsour cream 2 tablespoons or 25 grams ofMayo mayonnaise 2 tablespoons or 25grams of jalapeno salsa this one isactually from my breakfast taco videowhich if you’ve never seen it totallyfun you can use hot sauce 2 teaspoons orfour grams of garlic powder one and ahalf teaspoons are two grams of Chipotlepowder 2 teaspoons are three grams ofSpanish sweet paprika the juice of onelemon and salt to taste we sit togetheruntil completely combined and you gotthis thick sauce stuff sick and tired ofplain old iceberg lettuce ok insteadwe’re gonna slice our iceberg lettucesuper super thin place it in a bowl addhalf a bunch of roughly chopped cilantroand the zest of one orange toss ittogether you’ve got sort of a littleherb salad and for your diced tomatoeswell dice them nicely I like usingheirloom tomatoes and then generouslyseason them and let them sit in a bowlfor five minutes before doing anythingwith them and then after that wellthey’re ready to use so for assembly youneed to start with a nice warm tortillaas the base cut your chicken intobite-size pieces add a layer the but thesame size is your tostada make sureleave the skin on by the waydrizzle some of your cream on topfrom there you can add some shreddedcheese on top got a mix of aged cheddarsmoked cheddar and some munch a goatcheese it’s a good little combo if youwant it super melted in a little bitcaramelize you can totally torch it ifyou have a kitchen torch top with atostada shell lightly press to it behere at a generous amount of your herbsalad top that with your salty tomatoesand then drizzle generously with yourspicy crema now to fold this you’regonna add a little patch of extratortilla in the center of that then foldone side of your tortilla up over crimpand then the next piece and then andthen another segment up over crimp andthen repeat that process all the wayaround the perimeter of your tortillauntil the whole thing is wrapped andthey need to carefully remove this fromyour table top and then transfer it to apan that set over medium heat and becareful this will come undone prettyeasily if you didn’t make it big enoughespecially and then are just gonna toastit in a pan over medium heat until itstays together and it’s nice and crispyon that side flip it and repeat thatprocess should take about 2 to 3 minutesper side I’m just doing a little visualside by side the one on the right is thetaco bell’s little skinny and the one onthe left is mine of course thicker thana snicker relax right so where’d ittaste this to the other ones we’re tastetesting mine let’s get right into itfirst the sound bite okay we heard thesound bite of the other one I’ll try theother one for good measure this is thetalked about one ya know Obama’s won wewon you know we won the other day I sawmeme someone posted up me saying Joshevery single but better and I wasgetting myself an award and you’re damnright that’s true Chipotle grandma Ididn’t make any hot sauce but this justinto the hot sauce you a little of thaton there for one the homemade tortillathe flavor you could taste a bacon it’scrunchy salty whereas on this it’s likeit’s like 95% lettuce let me get mymedalI’d bestow this medal in the honor ofthe winner of but better to myself hangon hang onfeels good
