Homemade Buttermilk Pancake Mix
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoons baking soda
3 tablespoons sugar
1 teaspoon salt
For batter
2 eggs
2 cups buttermilk
4 tablespoons oil/butter
1 teaspoon vanilla extract (optional)
Mix all the dry ingredients in a large bowl.
Place in a sealable bag or airtight container and save up to 2 months.
To make the pancake batter, whisk buttermilk, eggs, and vanilla extract.
Add the liquid to dry ingredients and lightly mix together. Very important not to overmix for fluffy and thick pancakes.
Warm-up a frying pan on medium-low flame.
Spray the pan or add some butter to and spread all around the pan.
Cook roughly 3 minutes on one side. It is ready to flip when bubbles start to appear on top. These bubbles are very important because they keep the pancakes thick.
Flip pancakes and cook on the other side a little longer, until light brown.
Enjoy with butter and pancake mix.
Maple syrup
½ cup of brown sugar
½ cup of sugar
½ cup of water
½ tsp vanilla extract or maple flavoring
In a small pan, combine sugars and water. Bring to a boil and cook for 2 more minutes. Remove from heat, stir in maple flavoring or vanilla extract. Let it cool and use. Refrigerate the leftovers.
