Oatmeal Cranberry Cookies

Prep and cook time:
30 minutes
Preheat oven for 350 degrees

1 1/2 cups oatmeal
3/4 cup all-purpose flour
2/3 cup dark brown sugar
1/2 tsp ground nutmeg
3/4 tsp ground cinnamon
1/2 tsp baking soda
1 egg
1/2 cup brown sugar
1 tsp vanilla extract
3/4 cup dried cranberries/ craisins
1/2 cup salted butter, softened

line the baking sheets with parchment paper, set aside.

Soak the dried cranberries in tap water for 5 minutes to plump up, drain and pat dry with paper towel and set aside.

If using a electric mixer, combine butter, brown sugar, egg and vanilla until well incorporated and creamy texture.

On separate bowl, whisk the flour, cinnamon and nutmeg then add to the butter and sugar mixture.

Add the oatmeal and cranberries until batter until all well blended by hand.

For a good chunk of cookies, scoop about 2 tbsp of dough and form into a ball or scoop without forming a ball and place on the prepared baking sheet.
For chewy texture, bake for 12 minutes or until slightly golden on the edge.
