hi everybody i’m ashley from solar andhealth and today i’m working on a newrecipe and i thought i’d share with youas a kid I always loved Fig Newtons sothis is a healthy big Newton type treatand cookie they want to share with youtoday so we’re going to start with somenuts in order to blend them into aflower so I have about a cup of cashewsand I also threw in a handful of Brazilnuts which are really high in seleniumand a great way to add some moreminerals into your diet so we’re gonnaadd those to the Vitamix I have a widebase Vitamix or you could use a foodprocessor so we’re gonna start by justblending those up until they make a niceflower so with the Vitamix it doesn’ttake long and as you can see you nowhave this nice flower flower meal likeconsistency so I’m just gonna scrape thesides a little bit so that everythingthat stuck to the side gets blended inhere now from there we’re gonna add someprotein powder so protein powder is agreat way to add some extra protein toyour diet it’s wonderful for vegetariansand vegans this is a vegetarian proteinpowder from dried market so it’splant-based but you can also use a bonebroth protein in our collagen protein ifyou are able to take those in and that’sa great way to add some collagen intoyour food in your diet as well so thisis just about a cup of protein powderwe’re not in there and this protein fromthrive includes P protein o bran thisSanjaya protein powder which is reallygreat in some vanilla so you alreadyhave some vanilla flavor in thereand then we’re gonna add just a littlebit about a quarter teaspoon of bakingsoda and baking powder now it’s going togive it a little lift so when we bakethese into more of a cookie it’s gonnalift it up a little bit so it’s a littlelighter and fluffier and then from therewe’re gonna add in what’s are called ouregg replacement so this is going to be aflax egg replacement so this is abouttwo tablespoons of flax seed and thenfor every tablespoon ofsee if you add about 3 tablespoons ofwater so I’m going to add that in thereas wellthat’s going to make everything sticktogether now it’s not going to makeeverything fluff up the way an egg wouldso you’re when you’re baking gluten freewhich I have to avoid gluten and I haveto avoid eggs because I’m also eggintolerant you don’t get quite as fluffyas a big food so these will be a littlemore of a solid cookie but the flaxseeds gonna hold everything together andmake it a little Duty now the sweetnessand a little extra flavor is gonna comefrom the figs so in order to make thisbig Newton white cookie we’re going toneed to add some things so this is about1 cup of stemmed and chopped things somake sure you take the stems off andmake sure they’re nice and soft figs sothey blend well and add in some coconutoil so 2 tablespoons of coconut oil forthe nice healthy fat you could usebutter too and later we’re going to addin about a tablespoon of honey just fora little nice flavor and sweetness alsohoney is really full of nutrients andvitamins and minerals it’s a great foodthat feeds all these beads and so for anorder for those bees to stay healthyit’s chock full of minerals and thingsthat are good for us too it’s also greatfor helping with allergies if you putsome honey and water and lemon it’sgreat to your morning and then I justhave about 1/4 teaspoon of salt that’sgonna help enhance and bring all theflavors together so I just put it all inthe food processor or for me the Vitamixand let it go and it’ll turn into thisnice gooey doughso after a little shake I go ahead andscrape everything around the edges ifyou’re using a nice big food processoryou probably won’t have to scrape that’sgonna really blend this up nicely but ifyou are using more of a blender typegears when a lot of stirred thingsaround to the outside comes in one morestir it’s almost there so now you canstart to see the oils coming out thecoconut oil really blending through eventhe oils from the nuts are gonna startto break open and make this a littlemore gooey just wanna give it one moretime around so everything’s nice andblended so here we go so now you can seeit’s a nice sticky dough very similar towhat you get when you get a packet ofour cookie and we’re gonna add these tothe cookie sheet so I like to useparchment paper so that things don’tstick a little parchment paper onto yourcookie sheet and then I usually do about1 tablespoon size when I do my littlecookie so this nice little roundedtablespoon works perfectly if you have alittle cookie baller and you can usethat too and then you can go ahead andput this right onto your cookie sheet sowhat’s great about doing these recipesat home is that you can have your kidsget involved so this is a great kidfriendly recipe for giving them ahealthy sweet treat but with all naturalsweetness so often times we have toworry about unrefined sugars and addedsugars to the processed food sounfortunately the Fig Newtons that Iloved aren’t the healthiest option whenit comes to refined flours sugars andthings like that it’s very processedthey’re going to use basically thecheapest option out there when they’redoing a big package food so at home youcan use a lot of high qualityingredients and shoos ingredients basedonbenefits so I’m just gonna roll theseout and then I have the oven alreadypreset at 325 degrees um wine a littlebit of a lower temperature and thenwe’ll toss these in the oven okay so I’mgoing to finish rolling these out I’llpop them in the oven and I’ll be back toshow you how they turn outhi so we’re back and now I put these inthe oven for about ten minutes and checkthem they need a little bit longer soI’d say between 10 to 12 minutes forthese cookies to come out and you’llknow they’re ready when they start tohave a little bit of brown on the bottomso it’s a nice and kind of a littlebrown Chris meanness on the bottom andas you can see what I did here is thecookies aren’t gonna spread the way achocolate-chip cookie would that’s madewith eggs and flour and sugar so what Idid is just press the UM balls downabout halfway through baking so thatthey come out more of a cookie likeshape and these are ready to go so let’sgive them a try these came out reallynice they have a great fig flavor alittle bit of sweetness you can tastefrom the honey but the salt really kindof brings everything together and makeit really makes it taste like a cookieso I hope you enjoyed this recipe feelfree to follow me so you can learn moreabout healthy ways to make your favoritefoods and snacks for you and your familyhave a great day
