How to make the BEST Chocolate Chip Cookies (And I share some SAGE WISDOM)

Hey everyone! I’m Michael Nicastro. Today I make some delicious chocolate chip cookies with walnuts. I love cookies! Make them for your loved ones.

Also, I talk about the importance of “Timing” (not related but kinda related to making cookies). Be Patient!

Cookie Recipe:

1.5 sticks/170g butter
½ cup 100g light brown sugar
½ cup 100g granulated sugar
1 large egg
1 egg yolk
1 ¼ cup/185g AP flour
1 tbsp/7.5g corn starch
½ tbsp/2.5 baking powder
1 tsp/2.5g salt
1 ½ cup 260g chocolate chips
1 tsp/2.5g espresso
½ tsp/2.5g vanilla extract
1 cup/100g walnut (optional)

Procedure:
Cut the room temperature butter into cubes, then cream it together with the sugar for about 5min. (It should be fully incorporated and start to look fluffy). Then add your eggs and vanilla extract and mix. When that’s mixed thoroughly, add your flour and dry ingredients. Just mix until most of the flour is incorporated (don’t over mix, otherwise you will get tough cookies). Finally, add your chocolate chips and walnuts (optional) or any other toppings if you want.

Refrigerate the cookie dough for at least a couple of hours. (This is very important so the cookies can set and flavors can develop).

*Roll the cookie dough into balls before refrigerating it, I did not do this, but it will make your life easier. (TRUST ME)

Then bake in the oven at 350F for 14min. After 7min, rotate the pans in the oven so they cook evenly. Then at 14min access your cookies and look at the tops. Depending on your oven temperature and the size of your cookies, you may need to cook for an additional 2-4 min. I cooked mine for an extra 3-4min. (Keep in mind, it’s very easy to burn at this point, so keep an eye on them)

These are amazing cookies = flaky + soft & chewy.

today i’m gonna make chocolatechip cookies so if you know me I like todesserts cannolis and cookies in thatorder I’m not making cannolis because Idon’t have the cheese so I’m makingcookies step 1wear an apron and look like you know howto cook now I’ve been working at home onthis recipe I did it like five times soI’m gonna share with you right now sohere I have some granulated white sugarand some brown sugar I have some APflourI have baking powder and corn starchcorn starch is going to make it a littlebit softer and chewier and I have someespresso powder I like that kick we knowthat extract don’t add too much I alwaysOD on the vanilla extract I have twoeggs and has some semi-sweet chocolateand I have some walnuts because I likenuts so I’m gonna cut the walnuts rightnow we’re making chocolate chip cookieswe’re not making walnut cookies alrightso true story when I was in elementaryschool my Chinese grandmother used tomake me lunch and I didn’t want to eatit because I wanted to eat witheverybody else say I don’t want to eatChinese food so I wouldn’t need it andthen she started making me hamsandwiches and I didn’t like that eitherI was very particular so what I did dois I just take cookies from thecafeteria I ate that the whole day sothis is throwback to that will I getthis in welcome back to cutting walnutswith Michael so I’m not buying thesecookies from the store I’m making theseby hand I feel like it makes adifferenceit’s the care that you put into it whenyour family makes you a dish it feelsbetter it tastes betterit touches your heart of the knife overthere so every time you go out to arestaurant there’s so much care beingtaken by the staff all of hospitalityfrom the server’s to the chefs to theline cooks there’s so much thought andcare that goes into everything so shoutout to all my chef friends all thehospitality workers out there that putlove into serving you it’s time to cutthe butterall right so I’m gonna cut the butterI’m needs to stick in half of butterthis cookie I feel like is a goodbalance between crispy and soft andchewy that’s what I wanted all right soI’m gonna do a stick and a half ofbutter and cut this in half when I cutthe butter into cubesI’m cutting my cutting board I’m leavingthe wrapper on there so it doesn’t getsticky gonna cut it so I left this outon room temperature and to be honestwith you cutting butter kind of skeevesme out it’s kind of grossing me out butI’ll get through it for you guys justcubing the butter put it in here myhands are clean there we go now we’regonna cream the butter and sugar this isimportant process nice chewy cookies soagain half and half brown sugar andgranulated sugar going in go smart intemperature butter that is cute finedon’t touch the butter don’t make a messI’m use this paddle attachment and mixthis up so I have a nice kitchen ablender if you don’t have one you can doit by hand it’s gonna be more hard worklook as you saw like I’m good at mixingI mix the duck on a coffee in twominutes some people can’t do it in 20minutes it stinks for you but I havethis nice kitchen a machine so I’m gonnause it so I locked it in the ball istight and I’m gonna start stirring it soI’m gonna stir this for about fiveminutes I really want to cream this upit’s gonna make a difference you want tomix right now[Music]this is creamy I’m cracking some eggsI’m gonna use one egg yolk and wonderfulegg Diego adds some richness so a lot ofyou have probably seen me cooking withmy grandma it’s a great opportunityI’m actually happy because I get tospend time with her and cook with herand learn from her and what she does shedoes everything by feel and taste sonothing’s perfectshe tasted in the moment and she adaptsand adjust that’s you got to do in lifeyou got to adapt and adjust so this iscreaming together you could see thebutter and the sugar are coming likethis I’m gonna mix it a little bit morebut we’re almost there and be sure toscrape it with the spatula what you wantwhipped butter and sugar all right youdon’t need someone that went toConnery’s score as a chef to tell youwhat that is I went to car a schoolhonestly I don’t know how to cook and Itried this piece sometimes and theydon’t always work out and it’s kind ofbadI actually prefer eating anyway I’mgonna add the eggs in right now so again1 1 full AG and 1 egg yolkgoing in here I’m gonna mix that up onlow speed again lock it and don’t make amess so hands-on is the best way tolearn and family recipes which we learnin the home is more important so go talkto your grandparents go talk to yourparents you can learn a lot from themI’m gonna add my vanilla extract andagain be sure to stop and kind of scrapeaway the side so everything is wellincorporated so now the butter sugarvanilla have been creamed nicely youcould see the consistency change I’mgonna have to draw ingredient the flourit’s gonna add all of it in I don’t careand then I’m gonna add my leaveningagents my baking powder espresso powderand cornstarch with some chewiness stillthe cornstarch from my grandma becauseshe puts cornstarch and everything forChinese food make sure you geteverything in there and now is the timeyou don’t want to over mix because youdon’t want to work the glutens you don’twant a tough cookie so you want a nicemoist cookie so don’t over mix it atthis stagelock it stop now and now I’m gonna addmy chocolate chips my semi-sweet tipsyou can add as much as you want I kindof went overboard and my nuts so I’mgonna mix mix this a little bit morethere we gocan’t even mix alright so this is whatyou want the cookies come together Ioverloaded everything and a message toall the guys right now if you want thegirl to like youbaker some cookies i’ll tell you itworks every time take it from me alrightand girls to it your potential boyfriendhe’s gonna like it well aside fromdating with michael just share withanyone share with your friends sharewith your family it’s gonna make youhappier alright so look at this nicelyincorporated dough you can actually cookthis right nowbut things in life they don’t come easyand you gotta wait right be patient inlife so we’re gonna put this in therefrigerator for at least four hourseven better 24 hours and it’s gonnamarinate it’s gonna get better youmarinate meat same thing with cookiescookie life tip number one so I’mputting this in there on the floor it’sgonna rest in the refrigerator so let’sbring it back to life okaydid someone ever say anything to youthat made you completely furious likeyour boss said something to you thatreally triggered you so if youconfronted them in the moment youremotions were to come out and you’remaybe gonna scream at them instead ifyou took a knee and let the emotionspass the next day you’re gonnacommunicate at a more compost ate andit’s gonna work out better trust meall right welcome back good evening soit’s about 9:30 p.m. we made the cookiesat 12 o’clock so it’s been resting inthe refrigerator for about 8 hours wellit smells like coffee take a look atthisthere it goes so it’s set up nicely youcan see there’s tons of chocolate chipsit’s so I have the oven preheated to 350degrees and I’m gonna line two bakingtrays with a sheet of parchment papertry to do it there we go there’s one allright so what I should have done wasscoop the dough and then put it in therefrigerator but pre scoop it cuz nowit’s all stuck together okay so don’tdon’t be like me it’s all stuck togetherit still works it just needs a second tokind of thaw out so we’re gonna try toget some out we’ll see how this goesbecause again it’s too cold but it’llmelt so I have this little ice-creamscooper I think it is so I use it I geta size like this nice and compact youdon’t have to roll it it’s gonna it’sgonna spread out due to the bakingpowder that we put in here try not tomake this too big hard all right so Iuse a little elbow grease me doingpush-ups all day to roll these outactually did push those for eight hourswhile I was waiting for these to cool[Music]so again be patient good things come tothose who wait you don’t have to get itright away you could wait it’s going toturn out good so to make these a littlebit more uniform I have a bowl of waterI’m just gonna moisten my hands a littlebit or make them a little bit more roundit doesn’t have to be perfect you don’thave to do this I just want to make sureI don’t make one big cookie cake andI’ve done that before okay all right sothese are ready these are pretty muchroom temperature now my husband’s hotthat’s 350 degrees I’m gonna put thesein here we goAlexa set timer for seven minutes sevenminutes starting nowthat second timer for 14 minutes secondtimer 14 minutes starting nowbut two alarms so after seven minutesI’m gonna go in I’m gonna flip the traysaround so one side doesn’t get burnedand then at 14 minutes check them andthen depending on your oven temperatureif it’s too hot or it’s too cold youmight need to cook them for an extralike two to three minutes so just checkit after 14 minutes Alexa how much moretime do I have on my alarmthere’s no that’s wrong Alexa how muchhow much time do I have on my timer youhave two timers see it’s a timer timerwith about five minutes and 10 secondsleft and second with about 12 minutesleft okay so we’re gonna we’re gonnawait till the first timer Thank YouAlexa Alexa tell me a joke Jimmy take itawaywhat did Edgar Allan Poe say when heheard something rapping on his chamberdoor that’s so raven i don’t get itmaybe I don’t read a lot LexA tell meanother joke okay Jimmy make him laughvirtua Jimmy find a job in the 1800’s onAbraham Lincoln Ohthat’s a good time all right well I’mcleaning up a little bit the best partof cooking that’s wet all my cooking youfeel like asking Alexa anymore so yougotta clean up Alexa stop so take a lookat this it’s it’s getting really nicebut it’s a little bit raw still on thetop and the edges are getting nice andcharred so I’m gonna turn down the heatto 325 and cook it for two more minutesjust so the edges don’t burn and the topcooks and just don’t open the oven every10 seconds all right you really want tojust leave it just leave it alone Alexaset timer for 2 minutes let’s see how itlooks right now it’s been in the ovenfor another 2 more minutes so let’scheck it out ok I’m leaving for another30 seconds but I think we’re honestthere I prefer one minute I change aboutnot one more minute one more minutethere won’t be good the tray so don’tworry about that so this is cooked forabout 17 to 18 minutes you could seeit’s golden brown along the edges butit’s gonna cook a little bit all rightwhat’s most important is timing rightdon’t eat it right away because you’regonna burn your mouth it’s gonna be badand then you’re gonna blame me so onething you could take away from thisvideo timing is extremely important okaytiming of everything we’ve made adelicious cookie and it’s gonna sinkdown a little bit after it cooled sojust wait about 15 minutes all rightthese have been cooling for about 30minutes little bit really nice I’m gonnatry one first before I place it up sothis one so these have a lot of buttersso they get really flaky so let’s breakone open but it’s still moist and softand chewy I’m gonna try it outit’s really good we could say hello doesit talking in there it’s really good sothe full recipe is gonna be in
