8 MINS DOUBLE CHOC CHIP MELTING MOMENT COOKIES! No dairy! No refined sugar!

No refined sugar, no dairy! Vegan friendly!
Double chocolate, melt in your mouth cookies!
Yes please! Let’s bake!

INGREDIENTS –
Dry –
2 1/2 cups self raising flour
1 tbsp cocoa
1 tbsp stevia
1 1/2 cups organic dark choc buttons/diary free *
Wet –
1/2 cup vegan butter (Nuttelex)
1/4 cup honey
1-2 tbsp coconut oil (add more melted if mixture is a bit dry when mixed)
2 tsp baking soda
2 tsp vanilla extract

METHOD –
Heat oven to 180c Fan forced. Line 2 baking trays with baking paper.
Combine dry ingredients and set aside. Combine butter, honey, coconut oil and heat in microwave for 45 seconds until melted.
Add baking soda to melted ingredients and stir, add vanilla extract.
Add the wet ingredients to dry ingredients and fold in to combine and mix together.
Once combined and a dough that sticks together, create dessert spoon sized portions and roll in your palms and place on your tray pressing them done into cookie shapes.
Note – they don’t rise and spread too much.
Place in oven for 8 mins.
Let cool on trays for 10mins if you can wait and resist the urge to taste! 🙂

* For dairy free dark chocolate look for products only containing – cocoa butter, cocoa liquor, lecithin (usually soy-based), and sugar. No milk solids. Otherwise there are dairy free chocolate brands, or you may like to go for a product like “Noshu” which has no sugar(natural sweetness) and no dairy.
