Chickpea Cookie Dough

1 can chickpeas (drained and rinsed)
1/4 cup gluten free oats
1/4 cup gluten free flour*
1/4 cup+ a little extra sunbutter* or nut butter
2 tbs coconut sugar*
2 tbs maple syrup
1/2 tsp baking powder
1/2 tsp baking soda
Sprinkle pink salt
1 tsp vanilla extract
1/8 tsp almond extract (optional)
1/2-1 cup vegan chocolate chips (really just however many you want)

Place all ingredients except the chocolate chips in a food processor and blend until thick and smooth. (I use this one and its absolutely amazing! https://amzn.to/2PAZbh5 ) Scrape down sides if needed and blend again. Take out the blade and mix in chocolate chips. Transfer to a bowl! Enjoy it by the spoonful, dip a gf pretzel in it, or form into cookies/ place in skillet or baking pan and bake it!
BAKING INSTRUCTIONS:
Preheat oven to 350. For cookies, form into balls, place on cookie sheet and bake for 7-10 min. For cookie skillet, place dough in skillet or baking dish and bake for 10-15 min.

*NOTES:
1. You can sub 1/2 cup oats instead of 1/4 cup oats and 1/4 cup gf flour.
2. Sunbutter is sunflower seed butter. You can use this option for nut free. You could also use any type of nut butter you want! ALSO if you use sunbutter, your dough/baked cookies may turn green due to the reaction from the chlorophyll in the sunflower seeds when mixed with baking powder/soda.
3.You could use 1/4 cup maple syrup instead of 2 tbs each of coconut sugar and maple syrup

Can CHICKPEA COOKIE DOUGH really taste like the real thing? Of course it can! And today I’m showing you exactly how to make my signature vegan chickpea cookie dough. Now, this cookie dough can be baked into cookies or even into a cookie skillet (my personal favorite) OR if you’re just in the mood for some cookie dough, then you can always just eat it by the spoonful (no shame here). But seriously, I’m honestly shocked that cookie dough made out of chickpeas of all things can taste this amazing! It’s great that we can find plant based, vegan, and refined sugar free substitutes for some of our favorite foods! Chickpeas are actually really versatile and can be used in all kinds of plant based and vegan desserts! isone of my favorite desserts to make it’ssuper easy and a very quick recipe youcan eat it by the spoonful or bake it Ilike to bake it into like a littlecookie skillet or into cookies and againyou can just eat it by the spoonful ordip like gluten-free pretzels into itwhatever you choose this recipe is veganin the plant-based and gluten-free norefined sugars so it is absolutelydelicious you will enjoy it alright sothe first thing you’re gonna do is putyour ingredients into the food processorinto the food processor sorry can’t talkbut you’re gonna leave the chocolatechips out so I have one can of drain andrinse chickpeas so that goes in firstand then 1/4 cup of gluten-free flour Ijust used like a gluten-free flour blendbut you could use like almond flour orcoconut flour really whatever kind ofgluten-free flour you want and then 1/4cup of oats I have done just 1/2 a cupof oats and then omitted the gluten-freeflour and that’s delicious too sowhatever you want 2 tablespoons ofunsweetened applesauceand I’ve got two tablespoons of coconutsugar two tablespoons of maple syrup andthen with this two I’ve also like justused a fourth cup of maple syrup insteadof two tablespoons of maple syrup andtwo tablespoons of coconut sugar but Ikind of like the consistency it giveswhen you do coconut sugar and maplesyrup either way you’re only stillgetting 1/4 of a cup of sugar and then1/4 of a cup plus a little extra of aSun butter which is sunflower seedbutter it’s just an alternative to nutbutter for those of you with nutallergies you could use almond butter orany kind of nut butter I have doneliterally all kinds cashew butter almondbutter mix nut butter Sun butter theyall work great so whatever you preferand then I used half a teaspoon ofbaking soda and half a teaspoon ofbaking powder and then if you don’t planon baking it at all you don’t have toput that in there it really doesn’t makethe taste any different but I likehaving it just because I like to eatmine by the spoonful and or bake it so Iget myself options and then this is oneteaspoon of vanilla extract and this isoptional you can’t really see it becauseit’s clear but it is an eighth of ateaspoon of almond extract again that’soptional you don’t have to use it if youdon’t want to see sprinkles of pink saltand they just blend it all together[Music]you may have to scrape down the sides inbetween blending so feel free to do thatbecause I needed to especially if you’reusing a blender you will definitely needto scrape down the sides and also ifusing a blender I would not put all theingredients in at once I would do them Iwould put all the chickpeas in and thenblend those and then start continuingcontinuing to add the ingredientsbecause that’ll make blending a loteasier with the actual blender okay sothis is the consistency that you wantit’s pretty thick and then you can goahead and add in your chocolate chipsI’m going to take out the blade scrapeit off because I don’t waste anythingall right and so now I’m just gonna addin my chocolate chips I’m using about Iguess a half a cup maybe 3/4 to the cupI don’t really know use however muchyour heart desires don’t let anybodytell you how many chocolate chips youcan put in your cookie dough so just mixit all together and you want to makesure the chocolate chips are spreadevenly throughout the dough so if thatmeans you need to add more chocolatechips then go ahead and do thatalright so now once your chocolate chipsare mixed in you’re just going totransfer it to a bowl or if you’re gonnabake it then transfer it into littledough balls or into a skillet for askillet cookie all right so I got ittransferred into my bowl and now I’mgonna add in our add chocolate chips ontop these are vegan gluten free dairyfree all the top eight allergen friendlyso just sprinkle it on top this brand iscalled artisan kettle I actually foundthis bag at Costco which is greatanother brand that I like if you can’tfind artisan kettle is enjoy lifechocolate chips those are amazing tooalright so now it’s nice and beautifulwith all these chocolate chips on topbecause who doesn’t love extra chocolatechips so now it’s ready to eat or if youwant to bake it you can put it in theoven at 350 degrees for about 10 minutesyou can make those into cookies or myabsolute favorite is making this into acookie skillet and I use I think it’s a10cookies skillet but I’ve also done itand just like a baking pyrex dish so youcan do that as well but really any wayyou choose to eat it is absolutelydelicious sometimes I like to do allthree out of one batch so you can dothat as well and try
