How to bake a real German black bread with yeast water

550 ml buttermilk
170 g sugar beet syrup
90 g flaxseed (crushed)
90 g sesame seeds
65 g sunflower seeds
180 g wheat meal
180 g rye meal
2 teaspoons of salt
100 ml yeast water
330 g whole wheat flour

Put the buttermilk with the sugar beet syrup in a sufficiently large saucepan (the buttermilk rises) and heat the ingredients together while stirring. When everything is boiling, take the saucepan off the heat and add the flaxseed, sesame, sunflower seeds, wheat meal, rye meal and salt and stir thoroughly. Cover it with a lid and let it stand until it has cooled down or is still lukewarm. But at least 2 hours.

Put the flour in a large bowl and then completely add the yeast water and the soaked grains and mix them into a homogeneous dough. Cover the bowl and let it sit overnight at room temperature.

The next morning, coat a loaf pan and add the dough. Smooth everything with a little water and press the dough firmly into the mold. This is how you get the beautiful angular shape.
