[Music]hot sugary buttery liaised waffles orlike my daughter likes to call themsugar waffles these waffles are sofluffy and so light and chock full ofBelgian pearl sugar or sugar cubes ifyou want to achieve it and it’s just sofull of flavor this is a perfect brunchdish that goes with chicken waffle thatgoes with fresh fruit or even cane syrupand powdered sugar so stay with kitchenBravo subscribe I’m going to show youexactly how to make this beautifulEurope and style dish to make Liegewaffles there the beautiful sugaryfluffy belgian-style waffles it’sactually really super simple we’re goingto start with 1/3 cup of warm water 2tablespoons of brown sugar and atablespoon of active yeast so I want topour the water into the sugar and let itdissolve just like that now use a forkto mix it up a little bit and now I’mgoing to sprinkle the yeast on top andgive that a good little stir – perfectok so I want to let this sit for aboutfive minutes and become really foamy andactivate so in the meantime what I’mgoing to do is get two cups of flour ina large bowl and I want to havewhere’s myself here myself I’m gonna addtwo teaspoons of salt and I really likethe pink Himalayan salt because it kindof gives it like another depth of flavorit’s a very different kind of saltthat’s not like the kosher salt or thesea salt it’s make it a little bitsweeteryou know first assault so we put twoteaspoons right in here and I know itsounds like a lot but you have toremember salt is like a flavor magnifierI mean these little crystals are likemagnifying glasses for your taste budsso I’m going to go ahead and give this aquick stir good ok now this is all setwe’re going to be back in five minutesafter the yeast – sorry I can’t look atthat it’s already starting to foam upyou see how it’s getting a little reallybubbly and foamyso we’re gonna lift that foam up evenmore get even frothy here and then we’regonna add it to our flour so it’s been 5minutes and look at how frothy and foamyour yeast mixture has gotten it’s 1/3cup of warm water 2 tablespoons brownsugar and a tablespoon of yeast so whatI want to do is make a will in themiddle of my flour and salt here 2 cupsflour 2 teaspoons salt and make it welland I just pour this in straight Islandbecause I know the sugar settles at thebottom and I want all these sweetnessbecause it’s you know it’s a really goodsweet Belgian waffle as a matter of factmy daughter calls them sugar waffles soit’s pretty it’s pretty cool I want tostart mixing this up just like this andget the yeast mixed in with the flourit’s gonna become really really shaggyfear really quickly which is great whichis exactly what we’re looking for sofrom here I have 3 eggs and I’m justgonna crack them on the flat surfacehere and I want to go ahead and mix itin so for the 3 eggs that I’m gonna mixin I want to stir them in and add theeggs like 20 seconds apart so I’m goingto go ahead and keep adding in the eggsstirring in between each addition okayall three eggs have been mixed in andI’m gonna go ahead and put the bowl onmy towel here because I need a littlebit more stability I’m here I’m gonnakeep mixing just a little bit while Islowly pour in some butter infused withvanilla so I have a cup of melted butterright here and I’m just gonna pour inabout maybe a teaspoon ofno extract there we go I’m gonna mix allthat together perfect all right so BradI’m here nice light drizzle while I mixup the dough and I’ll probably go aheadand just kind of stop a little bit inbetween pours because I want to makesure that it gets mixed in really reallywell and this is gonna form a reallyloose dough and that’s great that’sperfect because that that what you’relooking for because the looser the doughthe more it’ll spread in your waffleiron yeah I just go right for it some ofuse my fingers makes everything in getthat piece of brown sugar all in thereget it really really well mixed this isgoing to take about maybe five minutesof mixing to get this done and of courseif you have a stand mixer it’s stillgonna take about five minutes becauseyou want to make sure that the dough isreally really well mixed up that all theingredients are in that every bite ofthe fluffy waffle is going to be just assweet and delicious and buttery and thebite before so whenever you’re makingthings like chicken and waffles this isa really great waffle recipe to use it’shearty enough to stand up to the syrupand the crunch of the chicken I meanit’s amazing all right so we’re gonna goahead and continue making this until itcomes together and then we have evenmore to addokay five minutes of mixing and mashingand stirring this dough and look how itall came together so beautifully it’slike really smooth and silky and butteryit’s awesome I just love this out okayso now we’re gonna do a little bit ofanger management kind of therapy we’regonna make Belgian like sugar crystalsokay now this is what we usually closefor like Belgian pearl sugar and you canmake it and you can buy it or you cantake the easy way and you’re like mecheat it so what I like to do is pick upa bag and put some sugar cubes in hereso I’m going to put maybe half a cup ofsugar kids like and they like to getpacked in there really really well supernicely when I come to sugar cubesecurity in LA it’s no joke there you gothat’s better I think that’s about halfa cup of sugar cube and I want to get asmuch air out of it as possible but alsomake the sugar cubes lay down like in asingle layer seal this up nowturning it into little pearls of sugarokay didn’t break my countertop that’sgood okay perfectall right so you see how beautiful therolls of sugar and so I’m a big fan Icame into a powder that’s awesomebecause what I don’t want you’re likeshould I get clumps of sugar which iswhy we break it up so this is going tomake like a really sweet surprisingsweet right whenever you bite into thelevel so I’m going to go ahead and pourall of this in to the batter mix it upjust kind of fold it in to get it reallywell incorporated super super sweet andactually super easy when you make thisyour family and friends are gonna thinkthat you went to a bakery that there’sno way that you did this all right sugaris all mixed up so now I need to coverit with some plastic wrap let it sit fortwo hours and let it rise now if this issomething that you want to do like thenext day this is a perfect recipebecause at this point you can cover itin plastic wrap and let it sit in yourrefrigerator overnight and the doughwill still rise and proof and then youcan make you waffles the followingmorning so if you’re planning somethinglike a Sunday brunch or whatever this isa perfect make-ahead recipe for wafflesthat’s what you wanted to make all rightso here we go that’s going away plasticwrap gonna cover it there’s gonna sitfor two hours and then we’re going tomake some sweet beautiful fluffy Belgiansugar waffles or Liege waffles okay twohours is far too long to wait forsomething like this sugary and butteryand so fluffy and puffy I can’t wait tostart getting into these things allright I have a waffle iron right hereand I should have my plays ready I’vegot a little bit of melted butter thisis half a stick of butter that I thoughtit and it’s just enough to brush ontothe waffle iron that way it’s going togo ahead and keep the batter coated andit’s going to keep it from sticking sowe don’t open this guy up I’m going tobrush just a little bit of butter just alittle bit all over the bottom and allover the top as well okayso for these Liege waffles they’re notvery big if you’ve seen three Belgianwaffles you know at a restaurant they’rekind of they’re kind of small they’renot really super huge so same thing goesfor these guys so I’m just gonna take ascoop of dough maybe two tablespoonsworth of dough like this I’m simplygoing to put it on my waffle iron justlike this okayI’m going to close it up and let thiscook for about three to five minutesdepending on when the indicator on yourwaffle iron says it’s ready or would itbe peek under the hood and it’s nice andgolden brown so we’re going to give thisa couple minutes and then we’re gonnacheck on it it’s been about 2 and 1/2minutes since we put our waffle in solet’s check out yay golden-browndeliciousness now the darker parts of itor where the sugar actually caramelizedand and that’s seared and crispy butlook at this oh that is a perfect Liegewaffle okay I’m gonna go ahead and makethe rest of the batter and you’re gonnacome back to see a nice big mountain ofbeautiful Belgian list okay stick aroundalright so look at all of these wafflesI mean look at how dark and goldendelicious they areso as the waffles cool the sugaryoutside is gonna harden a little bitmore shaking at these awesome beautifulwonderful little nuggets right herethese little crispy bits of sugarygoodnessso I’m going to go ahead and put in thevery lastand like I said two tablespoons ofbatter that’s all you needso this doesn’t look like very much butit spreads out completely throughout thelawful it’s in about three minutes thelast one will be dent and then we’regoing to go ahead and top them up andI’ll show you how to dress yourbeautiful Belgian waffles waffles comingout of the waffle iron look at that howdeeply gold and it is look at that it’sjust so sugary buttery awesome that’swhat this is so very carefully and veryquickly move it over to the plate lookat these guys super fluffy and sugaryLiege waffles I mean I’m gonna break offthis little piece right hereand you can just hear the crunch listenI don’t know you could hear that butsuper cranky because the sugar that wasmixed into the batter the parts that arecloser to the surface melted with thebutter that caramelized and gave it justan extra layer of I mean just it’s justsublime is what it isso with these waffles you can go aheadand dress them up however you like withcane syrup with you know store syrupwith honey however you want I on theother hand I don’t mind us in the pouchso and my little sister right here takea nice warm plate you know what justbecause I pan I’m just gonna go aheadand go extra sweet because you know Ilove my hand syrup so it doesn’t takemuch just a tiny little drizzle on thatplate right hereyeah that’s the little extra layer ofsweetness I’m looking for we’re justgonna take a little scoop of powdersugar look at
