These Homemade Waffles are so light and crispy!!
2 1/4 c all purpose flour
1/4 c sugar
1 TBSP baking powder
1/2 tsp salt
2 lg eggs (separated)
1/2 c unsalted butter (melted and cooled)
2 c whole milk
1 tsp van bean paste
Dry Ingredients:
Whisk flour, sugar, powder, and salt in a large bowl.
Separate eggs into 2 bowls. Using a handmixer mix the whites on high for about 3 minutes until stiff peaks form.
Wet Ingredients:
Mix butter, milk, yolks, and vanilla in a medium bowl until thoroughly combined.
Combine yolk mixture into dry mixture using a whisk. Fold in egg whites.
Spray down a hot waffle iron with cooking spray. Pour about 3/4 c of batter into the iron. Allow to cook for 3-4 minutes. Makes about 5 lg waffles.
Store in fridge for up to a few days. Reheats well in toaster oven! Enjoy!!
