Today, I made pumpkin pie waffles with pumpkin cream.
1 cup heavy cream
1/2 cup sweetened condensed milk
5 oz pumpkin puree
1 tsp pumpkin pie spice
2 cups flour
2 tsp baking powder
1 tbsp pumpkin pie spice
10 oz pumpkin puree
1 tsp vanilla extract
1.5 cup milk
3/4 cup butter, melted
Whip heavy cream with hand mixer until stiff peaks form.
Add 5 oz pumpkin puree, 1 tsp pumpkin pie spice, and condensed milk. Mix well until firm. Cover and refrigerate until ready to use.
Separate eggs and set to side.
In large bowl, mix flour, baking powder, and 1 tbsp pumpkin pie spice.
Add egg yolks, 10 oz pumpkin puree, vanilla extract, milk, and butter. Mix thoroughly.
In a separate bowl, beat egg whites with hand mixer until fluffy and peaks start to form.
Fold egg whites into batter.
Cook using waffle maker (would note that you could make pancakes with this if you don’t have a waffle maker).
Serve with pumpkin cream and any other toppings you would like.
