Here is a simple recipe for a delicious, refined-sugar free, gluten free vegan pecan pie!
Ingredients for pastry:
30 g (⅛ cup) coconut oil
75 g (⅔ cup) gluten-free flour blend
75 g (⅔ cup) almond meal
7 tablespoons water
Ingredients for filling:
260 g (1 ½ cup) pitted dates soaked overnight in cold water (or 10 minutes in boiling water)
250 g (2 cups) pecan nuts
170 g (⅔ cup) coconut oil (or smooth almond butter)
4 tablespoons vegan milk
1 teaspoon vanilla extract
Splash brandy (optional – ensure vegan/gluten-free if necessary)
Heat the oven to 180 C / 350 F. Mix flour and almond meal together. Add in melted coconut oil and water. Butter up a pie dish and press the pastry on there.
Blend all the ingredients for filling until smooth. Pour over pastry and bake for about 30 minutes.
