EASY RICE COOKER CAKE RECIPES: Apple Pie Crumble Recipe

INGREDIENTS:
• 6 cups (600g) CHOPPED APPLES (5 med green + red apples)
• 1 tbsp (14g) LEMON JUICE
• 1/4 cup (50g) WHITE SUGAR
• 1/4 cup (40g) BROWN SUGAR (packed)
• 2 tsp (6g) APPLE PIE SPICE (or cinnamon + 1/4 tsp nutmeg)
• 1/4 tsp SALT
• 2 tbsp (16g) CORN STARCH (corn flour)
• 1 tbsp (9g) ALL PURPOSE FLOUR

CRUST:
• 1 cup (140g) ALL PURPOSE FLOUR
• 1/4 tsp SALT
• 2 tsp (12g) WHITE SUGAR
• 1/3 cup (75g) UNSALTED BUTTER (cold & cubed)
• 1 tsp (4g) VERY COLD WATER

CRUMBLE/CRISP:
• 1/4 cup (35g) ALL PURPOSE FLOUR
• 1/4 cup (30g) ROLLED OATS
• 1 tsp (3g) GROUND CINNAMON
• 1/8 tsp SALT (a pinch)
• 1/4 cup (40g) BROWN SUGAR (packed)
• 1/4 cup (35g) CHOPPED WALNUTS
• 3 tbsp (42g) BUTTER (melted)

HOW TO:
1. Peeled and cubed/chopped 5 medium apples (green & red) to get about 6 cups
2. Add lemon juice to apples to prevent browning. Toss to coat
3. Add sugars, spices and salt then toss to coat
4. Pour apple mix into a sieve or colander to drain. “Save the juice” and also cover the apples to keep it moist
5. Prepare pie crust (see instruction below). If you are making an apple crisp, skip the crust
6. Remove the drained apple juice then add the corn starch and flour. Whisk until mixed. Microwave or cook the sauce until thicken; about 1-2 minutes
7. Mix the sauce with the apples ensuring the apples are well coated
8. Pour into the pie crust and distribute it evenly onto the bottom
9. Top it with the crumble crisp (see instruction below), distribute evenly over the top
10. Bake for 4 cycles (about 2 hours). If you like your apples more soft, then bake longer
11. Cool for 3-4 hours before cutting. The apple pie to set more and keep it’s shape when you cut it.

CRUST:
1. Combined flour, salt, sugar and butter
2. Use a fork, dough cutter or food processor to blend cold butter into flour. Mixture should be loose and when pressed together, hold its shape
3. Pour mixture onto a flat surface and form it into a circular shape. If mixture is too loose, add 1 teaspoon of cold water at a time to thicken it
4. Flatten with your hands or rolling pin into a 9 inch or 23 cm diameter
5. Cut two long strips of parchment paper and criss cross them on the pie dough (see video)
6. Use a pastry dough scraper, wide spatula or large knife to loosen the bottom of the dough, then flip the dough over
7. Carefully place the crust into the pot, centering and pressing the sides and bottom to flatten it

CRUMBLE/CRISP:
1. Mix all ingredients until combined. Mixture should be loose

OVEN BAKING:
1. Place your oven rack on the lowest level and place a cookie sheet or strong aluminum foil on the rack. You will place your pie on this to catch any bubbling over
2. Pre-heat your oven to 375F (190C)
3. Bake in a 9 inch pie pan for 50-60 minutes, or until your desire firmness. Check after 30 minutes. If the top is getting too brown, cover it slightly with an aluminum foil.
