For apple pie filling
Apple : 6
Sugar : 2-3tbsp
Cinnamon powder : 3/4tsp
Nutmeg powder: 1/2 tbsp
Cornflour : 1tbsp
Water : 1/2cup
Flour : 300gm
Butter : 200gm
Cinnamon powder : 1tsp
Sugar : 50gms
Salt : 1/4tsp
Egg yolk : 2
Cold water : 4tbsp
Peel and cut the apples’ flesh away from the core. Dice into piece an inch or less in size.
Apples with a nice balance of acid and sweetness are best for baking pies. Honey crisps, granny smith, braeburn, golden delicious, gala and cortlans apples are all great choices. Use your favorite and enjoy!
Toss the apples with sugar, nutmeg, and cinnamon and cook, stir,until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce heat to medium-low, and cook until the apples softens. Add cornflour and continue cooking until mixture has thickened. Once mixture has thickened and apples are desired consistency off the flame and let it rest to become room temperature
After mixing the dry ingredients together in a large bowl use a grater to grate the FROZEN butter into the flour.
Gently mix the butter with flour as you grate so it doesn’t clump up.
Once all the butter is grated mix well till butter breaks into smaller pieces.
Drizzle with 6tbsp of eggyolk water mixture and mix again.
Transfer the dough to a floured surface and knead together .If you can squeeze the dough into a clump that stays together it’s done. If not, add in another tablespoon of eggyolk water mixture.
Gently flatten the dough into a thick disk and cover it in plastic wrap or a ziplock bag, then place it in the fridge to chill for about 30 minutes to an hour.
Roll your pastry dough out to about 1/4″ thick. One half of the dough is for the bases and the other half is for the lattice tops. You will have to chill the dough for the lattice tops until just before cutting the strips and arranging on top.. Cut half of the dough into circles. Cut the other half of the dough into narrow strips, which you should keep chilled until it’s time to assemble.
Now place the circles and add filling on to it.
Arrange the lattice top and brush with egg wash again. Cut and remove excess with the same round cutter you used for the base. Sprinkle with sugar and bake at 180C for about 30-35minutes until golden brown in a preheated oven (@180C for 30min)
