Cooking with Kaitlin 7/12/2020 Lemon Meringue Pie

Today, I made lemon meringue pie.

2 pie crusts
2.5 cups sugar
1/2 cup cornstarch
1/4 tsp salt
3 cups boiling water
4 egg yolks
4 tbsp butter
1/2 cup lemon juice
Lemon zest
4 egg whites
6 tbsp sugar

Bake pie crusts according to instructions on package.
Separate egg yolks from egg whites.
Boil water in sauce pan.
Combine sugar, cornstarch, and salt in a bowl. Add to boiling water and stir constantly until thoroughly mixed.
Add a few spoonfuls of hot liquid to beaten egg yolks and mix well. Add yolk mix to sauce pan and blend well. Add in butter, lemon juice, and lemon zest. Stir constantly until it thickens well.
Let cool. Then pour into pie crusts.
Preheat oven to 350 degrees.
In metal or glass bowl, beat egg whites until firm and peaks form. Add in sugar gradually blending well.
Spread evenly over pies. Bake for 10 minutes until meringue browns.
