🍮 CHRISTMAS PUDDING
– 1 cup self raising flour
– 1/4 cup sugar
– 1 teaspoon bi-carb soda
– 185g butter
– 1 cup fresh bread crumbs (use food processor)
– 1 cup sultanas
– 1 cup rasins (chopped)
– 1 cup mixed fruit
– 2 eggs (room temperature)
– 1/4 cup sherry
– 1 teaspoon vanilla
– waxed or greaseproof paper
🥧 PUMPKIN PIE INGREDIENTS
– 1/3 cup brown sugar
– 1 tablespoon cornflour
– 2 eggs
– 2/3 cup CARNATION Light & Creamy Evaporated Milk
– 1 1/4 cups cold mashed Kent pumpkin (see note)
– 2 tablespoons maple syrup
– 1 teaspoon mixed spice
– Whipped cream, to serve
– Shortcrust Pastry
