What you need
2 – 8 oz pkg cream cheese
2/3 cup sugar
1 tsp almond extract
2 cups heavy whipping cream
1 TB shortening (I prefer using liquid coconut oil)
1/2 cup semi-sweet chocolate chips
4 cups fresh strawberries washed & hulled
1-2 store bought pie crusts
powdered sugar (optional)
Prepare pie crust according to pkg directions (use enough dough to fill 10-inch pie dish) – let cool
Since your blind baking use pie beads/weights to keep dough from shrinking
In large bowl, beat cream cheese until fluffy.
Gradually add sugar and almond extract, blend well.
In separate bowl, whip heavy cream until whipped.
Fold In whipped cream into cream cheese mixture.
Spoon into cooled pie crush. Arrange strawberries pointed side up over filling & chill.
In small saucepan over low heat, melt chocolate chips and shortening (or oil), stirring constantly until smooth. Drizzle over strawberries & filling – chill until set. Dust with Powdered sugar before serving and enjoy!
