Find out THE SECRET TO MAKING FLUFFY KETO PANCAKES with WALNUTS and A BLUEBERRY COMPOTE. this recipe contains NO FLOUR (of any kind) yet the pancakes come out light and fluffy!
Ingredients:
2 eggs
3 oz cream cheese
2 tbls sour cream
1 tsp vanilla extract
1 tsp Keto approved sweetener of choice
1/2 tbls cream of tartar
1/2 tbls baking powder
6 tbls butter
1/4 cup nuts of choice (optional)
Directions:
Blend all ingredients except butter and nuts
In a small cast iron or other skillet melt 1 tbls butter over medium high heat
Pour 1/3 of batter into skillet and cover
Meanwhile melt 1 tbls butter in another skillet over low heat
Uncover pancake and sprinkle with nuts if using (otherwise skip this step)
Cover Pancake and cook until edges begin to turn golden brown.
Flip pancake into other skillet and cook on the other side until edge turn golden
brown.
Remove from skillet and rest on plate nut side up (if using nuts)
Repeat the above steps until all the batter is gone.
Blueberry compote (optional):
Ingredients:
1/4 cup fresh or frozen Blueberries
1 tsp Keto approved sweetener of choice
1/4 cup water
Directions:
Combine all ingredients in small saucepan
Cook over medium heat until liquid is reduced to half
With the back of a spoon smash about half of the berries while cooking
Let stand a few minutes when done. Sauce will thicken as it cools
