This recipe from Sprout Right Family Food is super easy for ANY kid or parent to make. Eat them for breakfast, snacks, lunch or hell… even dinner!

Blender Pancakes
Dairy-free ~Gluten-free ~ Nut-free ~Vegetarian ~ Wheat-free

Makes about 12 pancakes

Anything that can be made in a blender is a good thing. This recipe is fast and simple, and you’ll have only one appliance to wash. I came across these pancakes one weekend, made a massive batch, and then ate them all week long. They are filling, so you won’t need as many as your usual mile-high stack.

2 cups (500 mL) gluten-free old-fashioned rolled oats
1½ cups (375 mL) unsweetened vanilla almond milk
1 large ripe banana, roughly chopped
½ teaspoon (2 mL) ground cinnamon
1 tablespoon (15 mL) raw liquid honey
¼ teaspoon (1 mL) sea salt
1 teaspoon (5 mL) pure vanilla extract
1½ teaspoons (7 mL) baking powder
l egg
Virgin coconut oil or unsalted butter, for cooking

Toppings (optional)

Sliced fresh fruit: apple, pear, or banana
Fresh berries: blueberry, blackberry, or raspberry
Crofters Fruit Spread
Pure maple syrup

1. Heat the oven to 200°F (100°C) to keep the pancakes warm as you make the rest of the batch.
2. Place the oats, almond milk, banana, cinnamon, honey, salt, vanilla, and baking powder in a blender and blend until smooth. Add the egg and pulse a few times.
3. Heat a skillet or griddle over medium heat and melt 1 to 2 teaspoons (5 to 10 mL) of coconut oil. Pour ¼ cup (60 mL) of the batter into the skillet and cook until the pancake is no longer shiny or wet looking, about 3 to 4 minutes. Flip it over and cook another 2 to 3 minutes. Repeat until the batter is all gone, adding a bit more milk if the batter starts to thicken. Place the cooked pancakes in a heat-proof dish in the oven to keep warm.
4. Serve the pancakes with fruit, berries, fruit spread, and maple syrup, if desired.
5. Store the pancakes in an airtight container in the fridge for up to 3 days. Reheat in an oven set at 275°F (135°C) for 10 minutes.

The pancakes also can be stored in the freezer for up to 1 month.

hello everyone my name’s Hadley and mymom is Lance Phillips and she’s theauthor of her new book sprout rightfamily food which you can find thisamazing recipe for blender pancakesthat’s what we’re making today they’rereally easy and they taste great I likethem cuz it tastes great and one likeselcas are healthy so today we’ve gotsome oats almond milk an egg somecinnamon honey vanilla extract bakingpowder soaps and bananas I wouldrecommend putting the wet ingredientsand first up the blender will spin wellwe’re gonna start adding our wetingredients first so we’re gonna add inthe milk hopefully I don’t spill it coolI’m gonna add in my egg then I’m gonnaadd in will do my honey because that’s Iknow another wet ingredient you use aspatula to get it out because I want toget all of it cuz that makes it tastesweet sure and then I’ve never knowand then my bananas flashing then we’vegot I’m gonna add my oats it’s okay thatyou’re making a mask my mom will cleanit up nowthen I’m gonna add my salt my cinnamonand last but not least the baking powderthen I’m gonna get the lid put it onhopefully everything won’t explodeeverywhere when I blend it and thenwe’re gonna love itall right a little more said enough allright now we’re gonna take off the lidit’s blended enough every all the oatsdon’t have to be completely gone as longas they’re gone enough that’s not allcheck be back should be good now we’regonna go over here to our trusty stoveI’m gonna turn it on there we goum and then I’m gonna grab a measuringcup so that I don’t have a littleliquidy but that’s okay and I’m gonnapour the first batch in and second andthen the third onenow I forgot to do this but you shoulduse some coconut oil to put it insidedoesn’t stick hopefully everything willbe okay but you can use coconut oil orfoil and I mean I guess you can usebutter but you probably shouldn’t somaybe don’t use butter I’m definitelygonna get our spatula I don’t know whereit is but that’s okayum I’ll figure it out it is here we’vegot our spatula tip bunch of stuff sowe’re just gonna wait for it to cookyeah make sure that you do put stuff inyeah one that when the bubbles come onthe top then you know it should be goodyou can’t I don’t know if you can see itor not but the bubbles are startingyou’re not quite there yet I’ll slip itin a little bit yeah then we’ll justwait hopefully should be good not yetthat’s what they look like right nowI’m signing for you to do stuff but Idon’t know what she’s saying so that’sokaybring the pan closer oh and maybe turnthe turn it up a little bit that’s whatthey look like pancakes all right[Music]sounds a little a little I don’t knownot quite right but that’s because I putthe oil insmells like bananaand then plate to put them on now theseones probably won’t look like theregular ones because again I forgot toput the coconut oil in sand that’s kindof sticking to the pan but okay kids arestill going to taste really good what Ilike to do is out to put maple syrup baror if you take like a little bit ofmaple syrup or a bun or something andsprinkle some whatever it’s called thecinnamon on top then that tastes reallygoodany fruit that you might like to add ontop hey I like blueberries on top of itblueberries taste good or bananas cuzyou know they’re kind of banana onesmango tastes pretty good with it tooyeah peanut butter – because peanutbutter and banana are always a goodgoing but they always taste goodtogetherthere we go got one see that’s whathappens when you don’t put oil down butthat’s okay[Music]got another one and then this lastlittle guy yeah so that’s what they looklike in the end they taste really goodI’ll have some to prove itprobably get a knife too but that’s okaymmm it’s very hot but it’s very good ittastes great you should really try outthis recipe definitely recommend itcan’t approve I would know I’m a goodthey taste really great don’t forget toput oil in the pan I really hope thatyou guys like this because I do my momdoes my sister does everyone likespancakes that the perfect start yourmorningfurther recipe make sure that you checkdown below or you can get my mom’s bookit’s on page 255 now I’m gonna go makethe rest of the pancakes and put oil inthe pan first you shouldah why can’t you do it alright we havetwo cup of old-fashioned rolled oatslet’s get cookin
