hi guys welcome back for those of youthat don’t know me I’m Heidi I teachfourth grade in Oregon and it has been along week it’s been a bit of time sinceI’ve been on here and made another videoand I made a cooking and baking videotoday because I was making one for mystudents so I figured why not use it forboth things that being said I amdownright exhausted from this week soMonday I started college at my newschool and well easier it’s a bit ofthere is a bit of a learning curve everytime you go to a new school there is abit of a learning curve and I amdownright exhausted from it and I thinkI always will be and it’s just a fact oflife it’s part of grad school yes I knowgrad school but that being said I amvery excited to be back into things andhonestly it makes a world of differenceknowing that I have like a school tocall my home finding a place to attendedwhen you’re in any program and theschool gets shut down it’s a very scarytime to tack that on like right afterall my school announced that about amonth later is when the the pandemicstarted becoming a really big thing soon top of trying to find a new school toget to and sorting out where you’regonna go and all this other stuff you’renow having to transition your entirelife completely and transitioneverything that you had establishedwithin the classroom your normalroutines and set up online that isterrifying and I don’t know if yourealize this or not but it is downrightterrifying it is so stinkin hard to takeeverything that you have establishedwithin a classroom switch it onlineplease all the parents honestly I don’tplease all the parents and Ithat there going to be a couple parentsthat will tell me that they’re pleasedthat aren’t pleased because either Ihave one that says that I give too muchwork because I sign assignments everyday like I’m supposed to we’re at it I’dmet I teach at a college prep school andwe don’t release assignments by the weekbecause we found that that wasoverwhelming people and at were theywere saving it all for the last minuteand not doing it until like the end ofthe week when it was all due so wereally I released assignments everysingle day every single morning at 8:00which I really could be waiting until8:30 to release them but honestly Ireleased I released the assignmentsevery day at 8 in the morning and I’monline by 8 in the morning supervisingwhat’s going on and I have parents thatsay I’m handing out too much work I haveparents saying I’m not handing outenough work I have extra assignments forthose that aren’t are worried aboutthere not being enough work but thosethat are saying that there’s too muchwork there’s honestly not much I can doif the kids were to sit down and nottake any breaks but for their stuff andjust do watch the videos and do theassignments since we’re not allowed towhen we’re not we’re encouraged not toteach over like a zoom call or a Googlemeet because we can’t necessarilyrequire that everybody attends that andI have a couple parents in my class whohave requested that I not record themeetings to be released later to thestudents because of that I can’t do anyform of instruction I can do questionsand answers over it but I can’t do anysort of formal instruction over Googlemeat or zoom which is a little bit hardbecause it’d be so much easier to do itbut that being said it’s managing tofind a way to engage the students soalmost every single one of my videos hassome form of stuffed animals that I useasI tell the story of that stuffed animalthroughout the day in each video theyget a new piece of information and theyget a question asked about it on theirGoogle Form and that’s just to help meknow whether or not they’re actuallywatching the video and if they’rewatching the video and gathering thatinformation in the new information I cantell where they’re going wrong theassignment and that’s that’s helpedquite a bitit’s taken quite a few of the studentsthat we’re really really reallystruggling and pushed them more into thethey’re struggling but not nearly asmuch they’re struggling like theystruggled inside the classroom andthat’s a good thingyeah but I am NOT making a cooking videobecause this week has been crazy chaoticwith Mother’s Day and cooking and doingall the weeding it for my garden andjust generally being exhausted like it’s12 a.m. and I’m making this because yeahthat’s life but that being said yeah Ifigured it was probably time to makeanother video and since I’m starting tomake more and more cooking videos I meannext week I have a pizza video that I’mgoing to end up making and I have acookie another cookie video that I’llend up making so it’ll just be it’s justa lot of different videos getting madeall at the same time but that’s okay I’mgood with it I’m cool yeah it’s all goodthat being said it is teacherappreciation this week so if you are ateacher and you are watching this ifyou’re a parent and you’re acting as ateacher you’re watching this if you aregrandparent a guardian an older siblingthat’s acting as a teacher to a youngersibling us and a student acting as atutor to another student please do notethat I appreciate you and all thatyou’re doinghonestly during this time it takes Ihate using the phrase it takes a villagebecausethat just I don’t know it seems almostdegrading to say it takes a village tome like it’s saying that someone’s notconfident confident and competent enoughto handle with it’s being thrown at thembut honestly during a situation likethis it does take a village because Ican’t physically be there with mystudents to walk them through step bystep and gather where they’re strugglingand where they’re failing in certainareas but I do know that if I can evencommunicate for five minutes with one ofthe parents who’s asking me what do I dowith this step I they’re confused onthis and I’ve tried to figure it out I’mkind of thinking I’m understanding itbut you’re explaining it in a differentway that sort of thing it takes ithonestly does take a village and one ofthese times and I have done video callswith parents I’ve tied teamed seriouslywith all of this whole thing I’vetag-team parenting with some of them byparenting parenting basically schoolteaching them I teach fourth graders soI mean a lot of the issues that I havethat come up in the classroom or thingsthat are almost like mild scolding andwhile I’m not saying the parents can’thandle it since it’s happening on theeducation front and I’m sending in theemails of the pants saying hey your kiddid this thing I’m gonna have a callwith them to explain to them thereasoning do what you will at home whichis what I normally do I normally send anemail home saying here’s the behaviorthat you can use here’s what I said tothem but now it’s a little bit differentit’s here’s the email that I’m sendingyou um I’m gonna have a call with themhere in the next couple minutes pleasemake sure they answer the call um yeahit’s a little bit different and againlike I said I hate using the whole ittakes a village thing but honestly atthis point in time it does take avillage and I am so thankful for theother educators and the students thatare acting as teachers and explainersfor their classmates and for the oldersiblingsexplaining these things to their youngersiblings I know that I’ve have a studentfrom last year and a student from thisyear and they tag-team teaching theiryounger sisters and honestly that isamazing knowing that there’s that levelof support within families where theparents can step back and actually go towork and then the students can take astep and help each other out and helptheir siblings out and act as thatteacher I am so incredibly thankful forthat and I don’t know if I can conveyhow thankful I am for that but if beganif your teacher you were a teacher youare acting as a teacher in any way shapeor form thank youI do appreciate all the work that you’redoing and just keep it up I mean it theschool year is almost over and we gotthisI know Oregon’s planning on openingsummer school back up which yes thatdoes mean that we’re on the right trackthere will be modifications but we’regoing to be open back up for summerschool and you know what it some of somekids honestly just need to be inside ofthe classroom online does not work wellfor them and you know what good for themthat being said let’s get to the bakingvideo that I promised so it’s me makingpancakes this morning and then cupcakeslater that’s the evening so it’s nothonestly not going to be that strenuousbut enjoy italrighty so I use a very simple recipefor this to make the pancakes we’restarting off with pancakes so I used anincredibly simple recipe it is a veganpancake recipe because my mom actuallycan’t really have eggs she’s very veryallergic to them and we were running outof eggs anyways and my mom’s alsolactose intolerant and my sisters aswell so the two people that I was goingto be feeding the pancakes to two otherpeople that was going to be finding thepancakes who couldn’t have the milk orthe eggs so there was that so it’s apretty simple recipe it’s one in thefourth cups of all-purpose flour 2tablespoons of white sugar 2 teaspoonsof baking powder 1/2 a teaspoon of salt100 fourth cups of water and atablespoon of oil honestly it is areally simple recipe to get throughyou start off sifting the flour sugarand baking powder and salt together in alarge bowl you could see me working withthe flour right nowI found out after this that we had in alarger that we actually have a realsister in our downstairs I didn’t knowthisso you see me with this teensy tinyitsy-bitsy little thing yeah well Ididn’t know this until after I wasmaking the pancakes done making thepancakes and that that I just put in wasthe mixture of the sugar baking powderand salt and then of course our bakingpowder is a little bit gloopy so I hadto smush the rest of it through with myfinger also guys make sure you wash yourhands before this I washed my handsbefore this I just didn’t show it youknow scrub your hands 20 seconds helpsprevent sickness and its really good foreverything then you add once you haveall of your dry ingredients in add thewater and oil so the 1 and 1/4 cups ofwater and the tablespoon of oil and thenmix it really well what you don’t knowis that during this at my mom and sisterare in the other room and they’retalking to me that’s why I don’t havethe audio for this and then stirring ittogether you whisk it really welltogether it says until just blended Ialways over mix my recipes because thechunks for some reason they just don’tcook well also make sure that youput enough oil into your pan at thefirst set of pancakes I made I did notput enough oil into the pan so theyturned out really really really paleyeah really pale but again as you cansee I turned on the stove really earlygetting that pin nice and heated andthen I added or I waited for a whilebefore adding anything then I added theoil again it looks like I added a lot ofoil I didn’t add enough oil and like Isaid my mom and sister in the room somom asked me to get her the coconut milkso I got her the coconut milk yes somake sure that your pan is really welloiled it’s a that pan is a really largepan I know it doesn’t necessarily lookit but there wasn’t enough oil in thatpan to cover everything and I probablyshould have added a little bit more butagain like I said this is probably oneof these simplest recipes I’ve ever doneto make pancakes super quick and easy tomake them I always use a ladle I get outa ladle and I use a ladle why becausefor me it’s the easiest I know somepeople prefer just to pour it I preferto ladle it on I can spread it aroundthe batter a little bit easier that waybecause this is a vegan recipe it is alittle bit runny err again like I saidmy mom can’t have milk and we’re eggsand my sister can’t have milk so yeah asyou can see it is pretty runny forpancake batter you can always add extraflour to it so I just made plainpancakes but with the same recipe youcan add think it’s two teaspoons ofcinnamon to it and you can make cinnamonpancakes I’ve done that several timesbefore it is definitely one of myfavourite things to do andadd cinnamon to taste my sister likes alot of cinnamon so we’ll add twotablespoons or so to it but withpancakes it’s mostly waiting game as youcan tell it’s really obnoxious to justkind of stand and wait for the pancakesto be done cooking but you don’t want toflip your pancakes too early so I dohave a second video that is coming uphere soon that shows when I flip thepancakes and the reason why I flip thepancakes when I do I’ll explain all ofthat laterbut oh also the reason why I keeplooking at my computer while I’mrecording is I’m teaching during this soI’m always making sure that I’m on my onmy email if a student emails me one ofthe emails me yeah I want to make surethat I have access to it so yeah I hadthe camera up in one on one half of myscreen and the other half of my screenwas my email why because once I have thepancake batter created it’s so easy justto finish cooking them you can also makethese on a griddle we have a griddle buthonestly I prefer to make it in the panit’s a little bit more contained and ourgriddleI haven’t oiled it or seasoned it it’s acast iron griddle and I haven’t seasonedit so when I go to cook things on it itisn’t the best so I actually do need togo through and season it mm-hmm all thatstuff but I don’t want to it takes toolong it’s so many hours of of work toseason it you probably can’t tell withthese but they are really really paleand again that’s because I didn’t haveenough oil in the pan I actually wentback in it added more oilafter I finished making these pancakesbefore this next batchand here’s the next batch that I’mmaking ignore my horribly chippedfingernail polish yeahso I went back and added them becausethey don’t have that egg or anything init to help them Brown you have to bereally careful with making sure thatthere’s enough oil in the pan so that itdoes Brown and it does get that goldenme color it’s not so much for it tostick to the pan mostly it’s just sothat it gets that color on itmy lab kept warning me she’s like she’slike you’re adding too much oil like momit’s it’s not gonna brown if I don’t addthe oil mostly because she thought I wasmaking a traditional pancake with theegg and no I’m not making thetraditional pancakes so as you can seethe bubbles start to form in it and asthe bubbles are forming that’s reallywhen you want it to where you want it tobe so you want there to be bubblesaround the outside that means thatoutsides are cooking and then as you cansee in one of the pancakes in the backof there’s bubbles that are starting toform it towards the center of it and yepin all of the pancakes or bubbles thatare starting to form in the center of itand you’re going to wait until thosebubbles are done popping in the centerso yeah it is a little bit of trial anderror and again these are smallerbubbles than you would get with withlike a traditional pancake batter orpancakes I have eggs or buttermilk in itthese are smaller bubbles soon you wouldget usually they’re really big and largeand your pancakes are out super fluffythese ones are fluffy but they’re notlike overly fluffy and like I said thisspecific recipe says that your mixturewill be lumpy I always over mix this oneso that it is a lumpy otherwise I’vebitten into it the first time I did thisI left it lumpy I bit into it and I bitinto a pocket just that was straightum flower and it was really gross sothat’s why I always over mix this onebecause of that first experience yeah itwas it was really about the first timebut I made sure to double-check all ofthe pancakes letting the bubbles formand pop honestly watching pancakes kindof grosses me out a little bit I don’tlike the bubbles and the holes andthings yeah it’s gross to meas you can see I checked a little bit itwasn’t quite ready to be flipped yetwhich is unfortunate because I ended upflipping them here soon because they’renot they don’t they don’t get as dark asthey really should but that’s okay ithonestly were in quarantine soquarantine pancakes I mean I madequarantine cake the other day so I outgrunting pancakes yeah so as you cantell it’s a little bit on the lighterside of a pancake but you know such aslife that one looked good yeah the oneson the edges were okay that one wasreally really really light but it wasalso on the very edge and it was thelast little bit of batter so yeah Iusually just let it cook for aboutanother minute once I have the pancakesin the pan yeah I usually let it aboutanother minute so once it’s justhonestly this once once I just cookedyou’re just browning the other side soyeah about a minute is all it takes tobrown the side once it’s been cooked sothat’s why I only cook it about anotherminute I’ve had people tell me that youshould only cook it 45seconds but they’re also cooking on agriddle and again I haven’t mastered thewhole pancake on a griddle thing I didin high school though I did have itmastered on high school electric grillshe’s really good at thatbut again we don’t have an electricgriddle we have a cast-iron griddle thatI do not know how to use and I have toseason it which isn’t fun but yeahit’s pretty easy once you have it’spretty easy to make the batter just makesure that you add extra oil into the panand that once hereyeah I’m not once your pancakes looksomewhat done that you’re taking yourtime with them like that one I kind ofspend a little bit of trial on thesepancakes double-checking where theyshould be and if they were if they looksdone so they look done that’s when Itook them out if they didn’t look done Ileft them in for a little bit longer Igot frustrated with these last littleguys and I just took them out but that’sit for the pancakes and here in a secondwe are going to be moving on to thecupcakes that I mean so now we’reactually moving on to the cupcakes I usejust a straight normal cake box type ofbatterI believe this one was like the DuncanHines cake ball dark chocolate fudgecakeor whatever also our scissors are reallyreally bad so we need to get new onesbut I made the pancakes this morningcupcakes for this evening I make and buythis meringue and this evening I meanyesterday morning and evening I used oneegg in this recipe this recipe normallycalls for three eggs but I only use onea and then I usually take the egg shelland I stick it inside the cake battermess and then to replace the other twoeggs I use aan applesauce Cup because you can useapplesauce to replace two eggs oneapplesauce cup is the equivalent of twoeggs and how do I know that off the topof my head well past one it’s pastexperiences because I have actuallyworked with with egg replacer sofrequently and yeah so for this recipeit was three eggs the cake mix a cup ofwater and a third a cup of oil the onething about using applesauce as an eggreplacer is that when you do that yourcupcakes will be so stinkin moist thatday will start to fall apartif you’re not careful so when you takethem out of the oven you definitely needto let them cool completely before youtry and do anything to them I let themcool completely and still when I wasflossing them I had the top of one of mycupcakes come clean off and I’m likewell glad I have extra frosting andpatched it back together with some extrafrosting yes so the thing with cakebatter is make sure that you stirring itvigorously because you want to make sureall the cake goodies are fully brokendown into a nice smooth batter likeconsistency yeah so make sure that youdo that it took a little bit longer forme to do it by handI actually prefer doing it by hand it’sa bit of a workout and I kind of like itI know people that absolutely refused todo it by hand or insist on using theirstand mixer or their or their hand mixerI actually prefer using my yeah Iactually prefer using mymy normal whisk stand mixer I’ll use forthings like cookies or hand mixer I’lluse for things like cookies I actuallydidn’t end up using that specificcrossing my sister asked if that I usethe pink frosting so I ended up using apink frosting and then I take an icecream scoop because one large ice creamscoop is about the size of an averagecupcake and I just use that to fill theliners it makes things so much easierrather than trying to pour it in or usea little just one quick scoop of thatand you have the perfect amount ofcupcake batter interpret that goesdirectly into little cupcake holderswith this recipe you need to make surethat you are using cupcake holders orliners whatever you want to call thembecause again it is super moist and itdoes fall apart so easily please usethem otherwise you will be very very sadwhen they fall apart as you’re trying totake them out of the little tin yeah sofor me this this is yields about twodozen cupcakesit never does for me because I don’tlike the weird cupcakes that’s ithalfway through a tin I don’t know sofrom me I yield usually about 40 no notnecessarily 14 usually closer to 16cupcakes yeah so while there are fewercupcakes there and that’s normal for meand cake boxes well there are fewercupcakes they are ridiculously deliciouscupcakes again because I do useapplesauceyou’ll get usually get a little bit ofany almostuh not necessarily tin you’ll get likealmost a cinnamon taste in thebackground from it because we do usecinnamon applesauce in our house soyou’ll get sent them a little bit of acinnamon taste but it’s like I don’tknow for me growing up I always hadcinnamon spice chocolates and I thinkthat’s just a product of where my momgrew up and who she grew up with and whoI grew up having babysat me and watchedme as a kid so all my chocolates wereusually like dark chocolate cinnamonthough honestly I really enjoyed themilk chocolate stuff that my dad wouldbring home but we’d get a lot of likechocolates with cinnamon and stuff in itlike growing up my favorite my absolutefavorite hot chocolate was a bolita andthat is more of a spiced Mexican hotchocolate and it’s still to this day myfavorite hot chocolate I mean I haven’thad it in a long long time because it’sreally expensive in my area but in aheartbeat I would go and have it sothere’s that but right now I’m justfinishing up putting them in the tinsthe oven for this is set to 350 and youcook them for 18 minutes for me after 18minutes they are fully cooked almostover some of them are almost overcookedso yeah also again please make sure youwash your hands before you bake I did Iwashed my hands before this and afterthis and at one point in the middle ofthis yeah just thoroughly wash yourhands all the time and then once they’reready to go in the oven as you can tellI was popping that out of the waybecause it was mostly because it wasbugging me and my10 Boston and suffered taking us up onthem that is what they turn out to bewhen you hit them right out of the ovenagain I tried after about five minutesof cooling taking them out of the panletting them cool separately and thenputting them onto a different sheet andthen my sister asked so they use thepink frosting with the sprinklesso like I said these recipes are prettysimple and I was using them with mystudents so I wanted to purposefullymake them simple if
