Impress at Brunch with this Tray-Baked Pancake!

It’s time to level up your brunch game with this impressive Tray-Baked Pancake! This pancake is mixed in just ONE bowl & baked in ONE single pan. Yuppp, it’s as simple as that!

TRAY-BAKED PANCAKE
(serves 12 slices)

Utensils:
– Half Sheet pan
– Parchment paper
– Pastry brush

Ingredients:
– 1 batch of DIY pancake mix https://youtu.be/d9Zgn9pyhcE
– 2 large eggs or 3 small eggs
– 2 cups buttermilk https://youtu.be/KqUxcfGzKu8
– 1.5 tsp vanilla
– 5 tbsp melted butter (+ 1 extra tbsp for greasing)
– Toppings of choice

Directions:
1. Line your sheet pan  with parchment paper & brush over the parchment with 1 tbsp of butter.
2. Preheat oven to 218°C.
4. Combine and eggs, buttermilk, vanilla and 5 tbsp melted butter in a jug and whisk to mix well.
5. Mix in your DIY pancake mix into the wet ingredients & mix until just combined. Do not over-mix!
6. Scrape the batter into the prepared sheet pan & evenly spread the batter. Gently tap the sheet pan on the counter to make sure that the batter is evenly spread and there are no air bubbles.
7. Top your pancake with your toppings of choice.
8. Bake for 5 – 7 minutes. The pancake is done when a toothpick inserted into the middle comes out clean.
9. Remove the sheet pan pancakes from the oven.
10. Cut the pancakes into your desired portions.
11. Serve while warm with maple syrup and/or your sauce of choice!
