Cassava pancakes can go well in the morning as breakfast, lunch, dinner or a day time snack.

My Recipe for cassava pancakes
2 cups of cassava flour
3 eggs
3 table spoons of sugar
100ml of cooking oil
2 cups of warm water

Procedure

1. Put the flour in a bowl and the sugar and mix
2. Add the 2 cups of warm water and whip, you can use a mixer, or a whisk to mix until it blends well.
3. Add the eggs and continue mixing until its well mixed. The mixture should be light so as to give you light pancakes that will cook easily.
4. Brush your pan with little oil and pour you mixture and cook.
5. Serve while hot, with tea, coffee or green tea, or any accompaniment of your choice.
