1 c. all-purpose flour
1 tbsp. granulated sugar
1 tbsp. baking powder
1 tbsp. ground flax (optional)
1/4 tsp. salt
1 c. non-dairy milk
2-4 tbsp. coconut oil (optional)
Vegetable or coconut oil, for frying
Mix all dry ingredients in a large bowl. Then slowly fold in wet ingredients until reaching desired consistency. Oil the pan at medium heat, then add batter and cook until golden brown on both sides.
