Ingredients:
2 Cups All-Purpose Flour
1/4 Cup Granulated Sugar
2 tsp Baking Powder
1/2 tsp Baking Soda
1 Pinch Salt
1 3/4 Cups Butter Milk (Alt. 1 cup milk with 1 tbsp Lemon Juice or vinegar)
1/4 Cup Vegetable Oil
2 Large Eggs
1 Cup Fresh Blueberries
Butter, For Greasing The Pan
Directions:
1. In a large Bowl, Sift Flour, Sugar, Baking Powder, Baking soda and Salt.
In a separate Bowl, Whisk Milk, Oil and Eggs.
2. Combine & Mix The Wet Egg & Milk Mixture To The Dry Mixture. Mix Until No More
Visible Bubbles
3. Preheat Pan to Medium-High Heat And Lightly Grease The Pan With Butter.
4. Cook The Pancakes For 3-4 Minutes, Until Bubbles begin to appear.
Flip the pancakes and cook another 2-3 minutes before removing to a place.
5. Serve The Pancakes With Maple Syrup And Whipped Cream.
