INSTRUCTIONS
Prepare the batter
1- In a large mixing bowl combine semolina, white whole wheat flour or all purpose flour, dry yeast, and salt. Mix all the
ingredients till well combined.
2- Add lukewarm water little by little to the mixture and keep mixing until you reach a buttermilk consistency.
3- Place the batter in a blender and mix for about 1 minute.
4- Add the baking powder and blend the mixture one more time for another minute or until you have a smooth mixture.
5- Place the batter in a bowl, cover with the plastic wrap and a clean kitchen cloth. Keep your bowl in a warm place and leave it to
rest for 15 minutes.
Cooking the Baghrir
6- Over a medium heat, place a nonstick pan. Once the pan is hot stir the batter before using it then slowly pour ¼ cup of it into
the center of your pan. The batter will spread on its own, then reduce the heat to low-medium.
7- As the batter is drying you will notice the holes forming at the surface.
8- When all the surface looks dry and not wet, remove the baghrir from the pan. Do not flip the baghrir it only cooks from one side. The baghrir takes from 3 to 4 minutes to cook.
9- Place the baghrir on a clean cloth in flat single layer. Do not put them on top of each when they’re still hot as they might stick together.
10- Repeat the same process as you continue cooking the baghrir till you finish all the batter.

Making the syrup (optional)
11- In a hot saucepan melt the unsalted butter then add the honey. Stir until well combined.
Serving the Baghrir
Serve the Baghrir warm with the warm syrup or only with warm honey for less calories! Enjoy!!
